Healthy, low calorie dinner tonight

As I try to jump start this month's healthy eating, I'm trying to get as much vegetable as I can. I'm trying to limit the amount of carbs that I eat, so sometimes I can make a healthy substitute like I did tonight. I had cooked cauliflower from the other night, which I cubed up and used them as a potato substitute underneath some lamb and gravy. Of course, it is not potato, but it was tasty enough and I didn't miss eating potato tonight. When I cooked up the lamb shanks, and made the gravy, I did not use a roux made with butter and flour. The cooked carrots and onions that were in the broth in which I cooked the lamb, I used my immersion blender to thicken those vegetables, and I made a slurry of about 2 teaspoons of cornstarch and 2 teaspoons water. That considerably cuts down on the calories from a traditional roux-based gravy. For a side dish, I cooked a medium sized crookneck squash and gray squash. I also toasted a slice of sourdough bread, and smeared it with one teaspoon of butter. It was also delicious to sop up the gravy on the plate. I ate quite a lot tonight, but eating this way cuts my calories way down to a place where I need to be conscious to get enough nutrition. The way I can do that is by adding a third meal, instead of these two meals, like I had today. I've only consumed (not even) 800 calories today, so I need to make sure that I eat something else in a little bit. Keeping calories this low is not good for us, because it doesn't give us all the nutrition that we need. I will probably make a half sandwich later with some sliced luncheon meat and cheese. What kinds of things do you substitute for other Foods, when you are watching your calorie content? Photo is my own

I have so many no's in my diet, but I do find plenty of food I can eat.

I usually don't count calories, but I watch what I eat since I have allergies. One of my friend count calories but then binge eating on weekend, so it's useless if he doesn't have commitment to lose weight.

I only use an app to keep me on track. If I'm not eating enough calories in the day, I need to be careful about that. It really is a balance for me, living with this stage for cancer, and trying to live life as if everything is okay.

@TheSojourner I remember a recent post from Sharon about 'Life is strange but we all live in it together'. I feel you. Nowadays as I grow older, I feel stressed easily and get emotional easily. Then the walking to the library and eating chocolate actually helps my mood stable. Hold on, what we call that term about mood stable? Emotion stable or something

@Adie04 I understand what you are saying. Walking really helps with some of those mood-stabilizing hormones. Walking does increase the serotonin level in our system. That is the same for chocolate, because it contains tryptophan and that also increases serotonin levels. It's not a surprise that it explains why you might feel happier, less anxious, or more calm after eating a chocolate bar or piece of cake.

I don't watch calories, but I do try to limit the high carbs (but do I) and sugars (but do I). I had to think about this ... I guess I don't really substitute . . . I tend to add more sides (veggie/salad) to keep the portion (of a rice/pasta/potato dish) smaller.

I'm not really watching calories, per se, though I allow the tracker to do what it needs to do. I do take notice that, when I use zucchini or onions to add to things, the cost in calories goes up minimally. When I eat two cups of rice, the opposite takes place. LOL

I do, as well. And it was very satisfying. I did eat a cup of rice with a little bit of the remaining gravy and cauliflower that I had already heated up. I still didn't get a thousand calories in today.

When I watch my calories I cut on fats, butter and oil are high in calories, I also only cut on pasta portions and bread. I do not give up my little dessert in the evening.

I understand. My biggest carb is bread: Toasted sourdough, bagels, english muffins, tortillas, etc.

Looks very yummy. Cauliflower is one of my favourite vegetable. My mom cooks cauliflower like gravy type sometimes fry.
