Tuesday's dinner--Norwegian steelhead trout, cauliflower, and healthy vegetable salad

One of the reasons that I watch prices that I pay for my groceries, and use things that a lot of people might never think to use, as I want to be able to afford some of the other more expensive foods, for a splurge. Even then, I always look at ways of buying them on sale. Such was the case with the steelhead trout from Norway. I will buy some of these things from a company like Misfit Markets, or Imperfect Foods, when they go on a deeper discounted sale. The portions may be cut a little differently, or, in the case of tonight's fish, there were two small bones, one each in the portions. I paid $7.99 for 12 oz of fish. I prepared the trout in a browned butter with fresh lemon juice and dill. The cauliflower was steamed to make it a little bit tender. Then, I spread a mixture of mayonnaise, horseradish, and cheddar cheese, and finished it in the oven. The last few minutes I turned on the broiler just to give it a little bit more browning. Salad was mixed greens, with chopped carrots, radishes, cucumber, celery, and dressed with olive oil and balsamic vinegar. It was a delicious meal, enjoyed by two of us, at a total cost of approximately $15. I still have three fourths of the cauliflower left over, and will probably make a quick and easy cauliflower cheddar cheese soup with the remainder, adding in some homemade chicken broth, and pureeing it. I have the last of a sourdough round, which is starting to harden a little bit, so I will make croutons out of that to go with my soup. I do similar things for Cooper, where he gets real, healthy food to add to his kibble. I boiled two chicken drumsticks that I paid 12 cents each for, and added to it some of the wilted celery with the leaves, and all of the carrot peelings from our corned beef dinner. I chopped up cooked carrot skins and celery, added some broth and minced, boiled chicken, and mixed that with his kibble. He was in doggy heaven! Other than the chicken, those Foods might have ended up in the trash or a compost pile. Instead, it became a healthy alternative for Cooper! So, those are just some things to think about as we make our way through the week, eating well, and saving money. Photo is my own

I've been curious about steelhead trout . . . does it taste like, say, rainbow trout? I've often looked at it and thought it looked like salmon. Eating healthy and well frugally makes me feel happy and satisfied too !

@much2say I think I got it from Thrive Market or Misfits (can't remember), but it was cheaper than going to the fish store. LOL

As I understand it, they are a saltwater trout. As far as how they taste, very similar to Salmon but not as oily. I really like the flavor of the steelhead trout, as it's milder than salmon.

Those trouts are very similar to salmon and delicious. It is a long time I do not prepare fish in browned butter, I know GGC would love, but his doctor would not. I could prepare chicken for dinner, I have found a new recipe on YouTube that I would like to try.

@TheSojourner After the chicken is done, you remove it and cook in the same pan potatoes, cubed, one inch size. You cook 10 minutes, add back the chicken and serve.

I've been a bit under the weather lately. I think I am ready for sunshine to change these moods. I prefer the steelhead to the lake/river trout. It's been awhile since I have had either, before the other night with the steelhead.

@Icydoll I LOVE shark. I am unfamiliar with murrel, as I think it is something that is specific to the Asian areas. I like fry, but also curry. I love all types of fish: Salmon, halibut, tilapia, cod, and many others.

You are so thoughtful when it comes to cooking. You make use of everything so well and all your dishes look so tempting . Cooper must be in the heaven. What a treat for him to relish! I am tempted to make cauliflower like that.

The cauliflower is so simple. I have pre-cooked it before in three different ways in the past--steamed whole on the stove, microwaved for 8 min for a fairly large whole, or put in the Instant Pot whole for about 3-4 min and quick release. The "sauce"/spread is mayonnaise mixed with the addition of ingredients of cheese and other flavors. Mayonnaise, shredded cheddar, dijon mustard, and a touch of prepared horseradish OR Mayonnaise, parmesan, garlic paste OR Mayonnaise, shredded gruyere and grated nutmeg OR the combinations could be limitless, and I usually add black pepper to any of them Spread the mixture all over the partially pre-cooked cauliflower, and then place in a preheated oven to finish the cooking (maybe about 20 minutes), finishing under the broiler for a couple of minutes for more browning, if you like. You can do it from the raw state and bake it longer, but I like the preliminary step. I also found this link that gives four more ideas:

@arunima25 it's so simple. You could do something similar with the cauliflower florets that are coming in the Frozen section. I would just take that mixture and mix the Frozen cauliflower in with it and then top with some bread crumbs and bake it in the oven. It wouldn't be as good, but it would certainly be a good substitution from time to time.

My oldest girl tells her friends that her (me!) can make delicious soup for pennies out of almost nothing. I think she is exaggerating, but she swears on it so I will just accept it, coming from her~ I cooked a huge baking hen today given to me by a friend who has chickens, she culled out a few she decided were just not laying much and put them in her freezer, except one she brought to me. She claimed not to have room, but I think she just wanted to treat me. So we had baked chicken and I made some delicious broth. It's strained and going in the freezer here shortly to become part of other good dinners. This was a huge hen, I think she must have been fairly old for a chicken, friend said she had her for at least 3 years. So, I scored big time. Your salmon, and your entire meal, look utterly wonderful!

@TheSojourner Years ago we lived where we could keep chickens. Husband wanted banty hens. Two of them were the meanest chickens I have ever seen. They both had a brood at about the same time, and the mothers pecked the babies in the head and killed them. We gave one of them another chance and she hatched babies and I caught her doing it again, I managed to save some of the babies from her evil ways, and she went on to another place. I didn't even want to butcher her, she was just too mean. The other one got killed by a hawk. I didn't want banties after that.

thank you for the kind words. I have often wanted to learn to cook dishes from your part of the world, but finding some of the ingredients can prove difficult, and knowing what to do with them. I watch a woman on youTube who lives in Washington DC, but she is an African woman (I don't remember from which country). I would LOVE to try the foods she cooks, and go to the market with her and cook with her in her kitchen.
