I decided to put a pot of chili on the stove. As I started adding to it, it has evolved into something that could be called anything.
Some of you, if I told you what is in it before you eat dinner at my house, you wouldn't need it. If you didn't know, you'd have two bowls. It's funny how people are like that.
As many of you know I cook up things that some people waste by throwing in the trash.
Everything in the refrigerator must go
The other day, I had a container full of carrot peelings from the day I made a corned beef boiled dinner. I did not throw them away.
They had been washed, and cooked with some chopped celery hearts, and boiled with two of the chicken drumsticks I bought on sale. I added nothing else to it, so that I could use it to make some food to add to Cooper's kibble.
The huge pot of chicken stock and these throwaways, cost me $0.25 for the two chicken drumsticks. Yet, I had so much that I made two litres of food for him, and still had two more.
What else did I find?
As I am always finding things that are on sale, I decided to inventory my freezer and pantry to see what else I could come up with to add to a chili/soup
Hormel® meatloaf, crumbled $1.99
Can of organic diced tomatoes $0.75
Can of black beans $Gift
2 cans green Chiles 38¢ ea $0.76
Can of no-salt corn $0.50
2 cloves fresh garlic $0.05
Half onion $0.20
Cup chopped celery $0.10
Chili & cumin powder, salt & pepper $undetermined
Dried oregano $homegrown
Aforementioned chicken and vegetable stock $0.10
Total cost for this huge pot of deliciousness: <$5.00 for ~5 quarts/liters.
I will let this simmer on low heat for the afternoon. I will adjust the seasoning in a couple of hours. I may need to thicken it just a little with some corn meal, but it's already delicious.
This is a type of soup that RGD likes, when I make it and send him home with a couple of litres.

I´m begining to be interested in that as we are entering fall. I cannot eat a hot soup in summer but I love any sort of soup when it is cold. A couple of weeks ago I tasted for the first time the most delicious Spanish cold soup: salmorejo. Look at it. Easy and inexpensive.

I actually have eaten salmorejo before, as well as many gazpacho recipes. I don't care for them. But I like warm soups any time of year, especially here in the Pacific Northwest. With very few exceptions, we have milder weather that doesn't make things too seasonal.

It has been rather chilly lately. Soup is always a good idea.
And we can get away with the soup preps with only a couple of exceptions throughout the year.

@TheSojourner - We had a little rain yesterday and we both felt the weather.
I made stewed lentils for dinner, we enjoyed a hot dinner.

@TheSojourner yes.
Its actually corned beef made from scratch. A nearby restaurant offers it in their menu. They cook the corned beef in its own fat/oil and then add marble potatles and onions.

@marlina I try. I guess there's a part of me that has always felt a little bit guilty for leaving the marriage. I've always seen him as my friend. Other than family I grew up with that's still around, and my daughter, I've known him longer than anyone else that's still in my life. I'm glad that we are still friends and look out for one another.

These are the favorite kinds of soups I like to make. Some turn out better than others, but it's one of those things that is just makes me feel like I'm doing my best to feed the world. LOL

Sounds good. We've been eating black beans lately. One night had black beans as the protein, the next refried black beans. A vegetarian friend of mine told me about including sweet potato or yam chunks into black bean chili. It tastes pretty good and fills the belly nicely.

I have so many beans right now that I need to start eating. Once I get done with some of the soups that are in the freezer and start to get through that inventory I'll start cooking more beans again and putting them up in containers in the freezer. I'll have to try the sweet potato with black bean chili. That sounds good
