Frugal Living: Slab of ribs turned into two meals to last for several days

Earlier, I alluded to the fact that I was going to be doing some cooking, after I put up the four quarts/liters of chili.
I have never bought a slab of spare ribs to cook before last week. I've always been intimidated by them. However, I remember my mother making them.
I found the slab for $5.15 on regular price. It was nearly 4 lb, and I figured I could get 8 to 10 servings from it, As I limit my meat protein servings.
I decided to use the six with the longest bones to cut and make barbecue spare ribs. I put six large ribs into a container, and used up the last of a bottle of barbecue sauce that was in my refrigerator.
The remaining slab was cut up into pieces, and browned as I did the others. Instead of finishing them off by baking them in the oven with barbecue sauce, I made a sauerkraut with onion and Apple, and I nestled the brown pieces in my sauerkraut concoction. I put it in a large ceramic Dutch oven and baked them together.
I did eat one of the barbecue ribs and a small portion of meat and sauerkraut to sample them. Both were tender and delicious!
I should not have to cook anything all weekend! All I need to do is make salad and heat things up. I will likely also boil up some potatoes for the pork and sauerkraut.
Of course, I may make oatmeal for breakfast, but I don't consider that much like cooking!

Or I will be! LOL I had those barbecue ribs for breakfast. Cold, right out of the refrigerator! And I kept all of that barbecue goodness, and I just put some andouille sausage in it and will do something with that later.
I have never had that kind of barbecue sauce before. I got the jar on sale because the label was coming off. It's a tasty barbecue sauce. This one was the sweet and spicy, I think

The BBQ ribs sounds really good. And frugal. My latest "Very Frugal Meal" was more humble: Top Ramen with some very dry Safeway weekend fried chicken, serrano peppers and sliced zucchini tossed in. It was actually quite satisfying!

I like that mix of ramen with your other ingredients! It sounds delicious!
I know that you use quite a lot of serrano peppers. Do you buy them fresh, or jarred?
I wish I could share with you some of the jalapenos that I pickled at the end of last season. I need to figure out something to do with them.

Those ribs look delicious. I prepared the chicken and potatoes according to the recipe I found online and it was really good, even better than I thought. I do not know if the pizza I had for lunch was the "guilty" one, but I had a horrible belly ache during the whole night.

I'm also sorry to hear that you ended up with a belly ache. Please take good care of yourself, and get back to good health soon. I know you've been running on empty lately, and you deserve a break!

Those ribs… Wow! Although I didn’t need to read about the post, you and I had already spoken and I saw the fall off the bone meat final product. A plate that looked like it was licked by Cooper. You did a fantastic job Coral I think you should open Coral‘s kitchen!

I don't know why I have been "afraid" of cooking ribs before.
I will likely buy them and cook again. I have a chipotle molasses bbq sauce to open and use from the pantry. LOL

I buy steel cut oats. I put my water, oats, a little salt, some raisins, and walnuts in the pot. I bring it to a boil, give it a stir or two, and then I turn the pot off and let it sit, covered, until I'm ready to come and have some breakfast. The directions say that I should boil it and stir regularly over 12 minutes. I don't have time to stand there and wait. So I bring it to the boil, then shut it off, and I have it ready to simply put into a bowl and pop into the microwave for a minute or so to get heated again before adding milk and my butter or sugar or whatever I put on top of it.
