When I was a child (and not so little later on) we had barbeques and my mother made a wonderful sauce called "pebre" to add to the meat. It was delicious. It had diced onions, tomatoes, sweet and hot peppers, cilantro leaves and was dressed with salt, pepper and either vinegar or lemon juice. Just imagine it over a piece of meat!
Time went by and someone invited me to Foz de Iguazú (the frontier between Brazil, Argentina and Paraguay). There they gave me the very same sauce. Only it was called "chimichurri". So be it, I thought.
And 2 years ago, when my youngest grandson on Tania´s side came with his fiancée, they left me some things they had bought. One of them was "pico de gallo". It was a Mexican sauce, they said. I thought, fine that Negor who is Iranian can say it is only Mexican. But a Chilean man should know that he had been eating the same sauce with a different name all his life.
Today I made what you would call a Spanish tortilla. We call it simply tortilla de papas (potato tortilla) I added what was left of some pebre (chimichurri, pico de gallo, you name it as you wish) I had left. It was delicious.
Do you have any dish or sauce that is named different depending on where you live?

@LadyDuck I agree. And we finally have our own recipes. I add more cilantro because I love cilantro.

@rakski I just read about you arroz caldo. I understand that it is part of your fusion cuisine as is the name in Spanish.

There are people who love cilantro and other that don´t. It is like Brussel sprouts. I´m a lover of both.

Just salsa is the only one I know here with tomatoes and cilantro and lime..I am not sure what it would be called anywhere else.
I absolutely love it made fresh.

I do it in the moment. The ingredients don´t keep well. But I did have a little leftover sauce and added it to the tortilla and it was awesome.

@RebeccasFarm The cilantro and the tomatos live less if they have dressings. It is like lettuce. I never add dressings to lettuce if there is a chance that there will be leftovers.

@marguicha Yes Marguicha..you are so right..it does not taste well if it is kept..if you have it right away, it is beautiful.

That sounds so delicious, I cannot think of any sauce like that but this sauce you mention I will remember. The only thing is I do not like it to be too hot and spicy. When I buy salsa sauce I always get the mild kind. Mentioning salsa sauce it came to me that this is probably that kind of sauce because it is basically made the same but there are many different varieties,

I make it myself so I make it as hot as I like it. If I have guest, it depends on the guests I have. Often I make a hot one and a mild one.

We have chimichurri here; but I don't know how it's made. Our pico de gallo is mostly tomatoes and onions. Happy Monday!
