Birds-Eye Dinner in a Bag

That's what I cooked for dinner tonight. These frozen dinner-in-a-bag meals are almost too convenient. Almost. Tonight's selection was Sweet and Sour Chicken. The bag includes everything from the meat and veggies to the rice and sauce. From freezer to plate takes 10 to 15 minutes. And it tastes good, too. Another nice thing is that one bag makes just the right amount for the two of us. The cost isn't bad, either. Tomorrow, I may make something that takes a bit more time. Vince, being Catholic, always had fish on Fridays but we didn't really have a special dish. We probably had a roast on Sundays but I don't really remember.

I didn't grow up Catholic (I converted when I was 46), but remember Gorton's Fish Sticks was a Friday night staple. I think my mom was influenced because she grew up in a Catholic neighborhood.

@DWDavis On the farm, we often had fish on Friday. Friday was 'town day' and a guy used to sell fresh fish so Mum had the chance to buy it.

My mother made what I've been told are delicious deviled eggs. I wouldn't know. I tried one as a child and was so put off by it that I've never had one since.

I had a flash frozen fresh frozen meal of salmon, carrots, long green beans, in a garlic butter sauce. It tasted straight out of a restaurant, and was delicious and healthy. My dad used to have fried chicken once a week, on Sundays, growing up, and he always said those were his favorite meals. His mother’s fried chicken probably was the best I have ever had too. You’d think most fried chicken would be the same, but hers was different.

My dad had his own recipe for fried chicken, and I've never had its equal. He always joked that if Colonel Sanders had had his recipe, he'd have been made a General.

You eat spaghetti and listen to Prince on Wednesday? I have fallen in love with putting a little grilled chicken in the skillet and covering it with thinly-sliced potatoes.

I remember the television commercials for Prince Spaghetti Day too. We usually have fish on Fridays during Lent.

It was (maybe still is) a brand of boxed spaghetti. It was huge in the greater Boston area where my mother grew up, and even though she moved to NC with my dad after they got married and he finished his time in the Navy, she always made spaghetti and meatballs for Wednesday dinner.

Those dinners in a bag do come in handy. We had pasta and veggies last night. Can't recall having the same meal on a specific evening at home although in school we had fish every Friday. Living in Philly back in the 70s schools served that because of the high percentage of Catholics living there.

No, no special meal nights. My mother was a horrible cook except for her potato gnocchi. But she was the best baker around. I had turkey and Swiss on a bagel.
