Zucchini Galore

My son's garden took off this year and there is an abundant of zucchini, tomatoes (all types), yellow squash, peppers, bell peppers, cucumber and more. He has given away a lot of it and yet, it's so plentiful, we can't keep up.
According to foodprint.org, zucchini and other squash are native to the Americas. Seeds as far back as 10,000 years were found in Mexican caves. The original word squash came from the Narragansett nation who called it askutasquash. Spaniards took it back to Europe calling it calabacitas. Italians called the larger zucca and the smaller as zucchini.
The largest zucchini on record was 64 1/2 pounds. In length, 8 feet 3.3 inches.
I began making fried zucchini, zucchini poppers, zucchini patties, zucchini soups, tomato and herb zucchini, zucchini muffins and a cake. I froze so many and eaten so much, I'm zucchini done. For now.
My son is allowing a few to get huge for seeds.
I began another batch for bread and my son asked why don't I make a cake using the new silicon Bundt pan. It turned out so good. He made a Swerve frosting for the top to keep it with less sugar. I attached the photo.
The hardest part of zucchini is grating and pressing the water out.

I do not have a garden but some gardeners here are donating some of their abundance as they have way too much as well. My favorite is the eggplant squash..is it a squash?

@RebeccasFarm I lived in a tiny town in Oregon before coming here and we all took produce into the tiny town to share. The hardware store always put a big cart out for us to fill up. I haven't found that here.

@RebeccasFarm I noticed everyone here wants to sell theirs. I know it's a good way to make extra but wish more were helpful.

No garden this year. You know you can grate zucchini and freeze it, right? Then you'll have a supply all Winter long.

@noni1959 Zucchini isn't my favorite. We were given a bunch of it during the pandemic. Pretty made some zucchini cake once and I cooked some in a stew and we kept trying to give the rest away.
I finally cleaned what we'd frozen out of the freezer last Winter.

@DaddyEvil I'm going to need to use mine before my trip the end of next month since I usually turn my refrigerator off in travel and let it thaw to clean. I have a lot to eat up. I have some in my son's too. It's a great plant for those in need of veggies on a low budget but after awhile, field grass sounds better.

It would depend since I'm in a small Eastern town in WA. There are two who already set up on the main strip and they have a Farmer's Market. I like to donate. So many can't grow and are in need. I'm going to call the Meals on Wheels tomorrow and see if they can use some of the produce. Some of the food banks are not being allowed to take perishables now.

I love zucchinis! It's one of the few vegetables that I like to eat. You're all fortunate to have such a thriving garden. I have attempted many times to get a vegetable garden going, but I think I am cursed with a black thumb that all plants would die. The only plants that I still have right now are succulents, cactus, and golden pothos.

I live in an apartment these days so I miss having a vegetable garden. I made this recipe a couple of weeks ago and was surprised at how delicious it was. I highly recommend!
Ratatouille with Farro is loaded with summer vegetables, like tomatoes, zucchini, bell peppers, and eggplant. Enjoy it as a vegetarian main or as a side dish with a protein.
