Burritos Filled the Bill

I would have posted this earlier, but I wrote a myLot post version of "War and Peace" this morning and wanted to let it marinate a bit. Of course, who would respond to a post that long? I jest a little. Surprisingly the post, although rather long, did get 9 responses as of this writing. It is an issue important to me, so thank you for those who read it and left your thoughts. But for dinner last night we decided on burritos. I browned up some ground beef and added some taco seasoning to it. Then we had some shredded lettuce, tomatoes, onion and fresh shredded cheese. We slathered sour cream on the tortillas before we loaded them. I decided to take a picture of the burrito before I rolled it simply because once it is rolled you really can't see what's inside it. Needless to say they were delicious and we had two a piece. What went on your dinner table last night on the 22nd of January?

DANM, I want some & can't have any, other than the STUFFINGS of a burritos, but what fun is that to eat?

I guess without the tortilla you could make a salad version in a bowl and that would still be good.

@porwest That's what I was thinking UNLESS I eat the wheat brand of any type of bread or rice I eat, I just met with my diation today & we talked about how to look for certain things I buy to eat & what to eat & how much blah blah blah, stuff I had already found on the internet. So needless to say the meet & greet didn't last too long but she did say that my SUGAR Dr "Shoemaker" will set me up with everything I need to get ne on the right track. Well HERE'S my/our problem from what I was told today that I have to put like 3-5 different foods on my plate each meal 3 X's a day & a certain amount with each meal HUH? Now she also said I have to be CONSISTANT in a time frame set for each meal, like 9 am 2 pm 7 pm RIGHT like that's going to happen when we forget to eat at X's. Plus stay active, well I have NO problem being active when the weather is where I can be active, cause I don't have a lot of space INDOORS in the TRAILER, like I do in the cabin & outside, & the stuff they want me to eat is fruits & veggies, but bits of veggies & bits of fruits. I'm just going to WATCH what I eat when & how much & keep up with my meds & weight & sugar, I'll be fine. I'm at the point in my life that why change what wont make a hill a beans when you have a 50-50 chance no matter what you do, if you do this wrong, your done. I've learned enough about this crap I think I can handle what I eat when & how much, if not then OH WELL I'll just go with the flow & let God handle what I can't.

@2ndchances24 It may be difficult to be so regimented, but maybe you can find some middle ground to MOSTLY be consistent. Sometimes, even though it is hard, you have to do what you have to do. The first step is always the hardest one. After that the next steps get easier the farther along you get.

No rule saying you have to read anything I post. lol. But happy when you do. Beef stew is ALWAYS delicious, and I did cut up and froze the other pound from the chuck roast I used for the beef vegetable soup and have it labeled to be made for a beef stew.

Your burrito looks really good. I fixed chicken wings and French fries in our oven for dinner. We will each have a orange later tonight.

I never cook chicken wings although I do like them. Just too expensive and all I feel like I am paying for are bones. lol I will eat yours though.

Very tasty. We had a very similar dinner a few days ago. Last night we had pan-fried cod with a dressing of olives, parsley, capers and lemon, along with courgettes, peas, green beans and what a friend's mum used to call 'jubilee mash', which is potato mashed along with other root vegetables, in this case carrots and sweet potato.

That sounds like a very good dinner as well. I'd eat more fish if it wasn't so damn expensive. But I still eat quite a bit of it.

Your burrito looks good. I had veal tongue, sweet potatoes, and arugula salad then. Today for lunch I took the liquid from the boiled tongue that I never spilled out and added some farfalle pasta to it. Made for a nice lunch. Now I know not to spill out the liquid. It’s tasty and can make a nice soup.

@porwest sweet potato is so good. Arugula too. Got a peppery taste to it. I bet veal tongue would be awesome in a burrito or taco.

Veal tongue? Egads. I just can't. lol. But I won't knock it. Come to think of it, I don't like sweet potatoes or arugula either, so I would have to dip out on the entire meal.

We hadn't done burritos in a while, usually opting to use our tortilla forms and make crispy taco salad bowls out of them, so this was particularly good.

I had a PB&J sandwich last night. I had a burrito once; and it was a frozen one. Actually it wasn't too bad. Have a good day.

I have had frozen ones in the past. I don't prefer them these days, but they ARE good.
