Remember that pineapple upside down cake I wanted to cook?

I finally got a chance today to make it.
What a disaster. First of all the recipe called for three eggs and I only had two. Chef Google said I could use a little mayo in place of the third egg.
I tried that and it actually was okay.
This cake always uses pineapple slices, but I bought crushed canned pineapple because I have issues with regular pineapple.
I was supposed to pat the pineapple slices with paper towels which was very difficult with the crushed kind. (I don't think I had to do that years ago.) I put the pineapple in a sifter to get the juice out that was needed in the cake batter.
I melted the butter in the baking dish, added the brown sugar, then the maraschino cherries. I poured the batter over it and baked it.
It then occurred to me. How do I flip a 9x13" pan upside down when it's cooked and cooled? And who has a plate or anything that size?
After it was done, I scooped out a little of the cake to taste it. The cake was okay, but it totally overwhelmed the brown sugar and cherries.
It wasn't at all like I cooked years ago! That one was so moist (probably because we didn't pat the pineapple dry back then) and this had way too much cake batter.
So, I went to plan D.
A, B, and C had already been tried. Since there was no way to flip the cake, I made a buttercream frosting for the top and I'm scooping it out of the baking dish.
I probably won't ever try that again, but it got rid of my pineapple upside down cake craving.

I learned from an aunt and one of my grandmothers, if I made pineapple upside down cake, make it in a square, or a round, cake pan. Generously butter that pan! (real butter!) Oh, and if you ever bake another large one like that, put a big cookie sheet on top of the cake pan, flip it over quickly, and let it drop by itself and it will be a neat job--at least it always worked for me that way! I bet it tasted delicious!

Oh my, I didn't think of a cookie sheet...thanks! It really isn't very good, though. The first mistake was using a Betty Crocker cake mix recipe. Way too much cake and too dry for this kind of cake.

Yes, that would be a lot of cake, you're right. Give it some time and make another one soon. We all mess up sometimes, it's just what people do. It sounds good, now I want to make one!

Pineapple upside down cake is not something I've ever attempted to bake. I've only seen them bake them on cooking shows and they either use a cookie sheet like @MarieCoyle mentioned or large cutting board to flip them onto.
At least you came up with a plan D and got rid of your craving

I used to make it years ago and it usually turned out fine. This just had too much cake and not moist enough.

It's been years since I had pineapple upside down cake. I remember using slices and crushed pineapple for it. I didn't have the trouble you had. I wonder if they changed the recipe.
I'm glad it still turned out, even though you need to scoop it out of the baking dish.

Yes; and I made it in a 9x13 pan. I left it in the pan and just served it with a spatula. The acid from the pineapple made holes in my aluminum pan. Oh well. I didn't drain the crushed pineapple so that the cake would be more moist; but that liquid ate through the pan. Have a good weekend.

That's wild, isn't it! Never dreamed the acid would do that. If (and that's a big IF) I ever try it again, I'll use a round or square pan and an original recipe that's not from a cake mix.
I probably won't make it because I really can't eat pineapple and Dale doesn't like it anyway. If I ever see a recipe like I used years ago, I might make it and give half away.

hubby makes it all the time & all he does is
he flips the pan (up side down) & the pineapples are on top
after you flip the whole pan but never thought about the
cherries, that sounds pretty good being I love cherries.
When you put the pineapple slices on the BOTTOM of the
pan 1st & pour the cake mix over top of it that's what makes
the UPSIDE down pineapple cake, oh man I wish I had some.

Yes, I used to make it years ago with no problem. But this recipe called for a 9"x12" pan, so it would be difficult to flip.

They really are after cooking hardly anything for a year.
After we got the doctor's suggestion that we wait on foot surgery, Dale said later, "Hey. I don't have to learn how to use that crockpot!"

@1creekgirl The melted butter does not work as well as greasing the pan and dusting with floor. This is something I do with every cake I make and I've never had a problem getting the cake out of the pan.

I have never tried to make such a cake myself. Sorry yours did not turn out well. There is a Betty Crocker Pineapple upside down mix you got me curious perhaps I will try that some, day,

@1creekgirl in that case something was wrong with the mix I would think, It should have been easy to flip. Then again I am the one who bakes a simple chocolate cake from a mix and no matter how much oil or butter I smear in a pan I lose a good part of the cake when I get ready to remove it. I believe when I can afford it I will buy ready-made pastries and cakes,

It was a Betty Crocker regular cake mix with directions on line with the recipe for upside down cake.

@1creekgirl I just love pineapple upside down cake. My mother used to make it in Africa where we had pineapples just growing wild. Well she didn’t really, we had a cook. And a Gardner, house boy, nanny and I foget who else. Get me!!

My very best advice is: DON'T USE A CAKE MIX! You could also use apples or peaches in place of pineapple. You're a good cook, no matter what NJChicaa says.

Best ones I ever made were in iron skillets and from scratch. I agree that they are not the same anymore. When I really wanted one, if what I had was crushed pineapple, then that was what I used. Your butter cream makes it sound very rich.

It not only was a flop, it doesn't taste that great. I loved the one I used to cook years ago. Wish I still had the recipe, no boxed cake mix.

If you decide to make it, try to find an old original recipe, certainly not Betty Crocker cake mix.
