It Was A DELICIOUS Clam Chowder

Man, can one ever go wrong making a delicious clam chowder soup? Me thinks not. And it had been a while since I made some and I was trying to remember as best I could how to make it.
Look at a recipe? Are you kidding me? That would make too much sense.
Nonetheless, it seems my memory served me well enough and it turned out excellent to say the least and every bit as good as I remembered.
I cut up some celery, potatoes and onions, then opened up two 10 ounce cans of whole baby clams and drained the clam juice into a bowl.
Melted half a stick of butter in the pot and cooked up the onions, celery and potato for about 5 minutes. Then added in the clams and cooked that up a bit more. 3 tablespoons of minced garlic went in. Then about 3 tablespoons of flour. Stirred that up. Added in 2 cups of beef broth (I already had one open, otherwise I would have opted for chicken broth), the juice from the cans yielded 1 1/2 cups of clam juice and I added that in. Another two cups of water was added in and 1 chicken bouillon cube.
I let that cook up a bit, simmering for a while and added a bit of salt and pepper. Then I added in 2 cups of heavy whipping cream, added a little more pepper and some oregano and let that simmer for a while longer.
Shortly before serving I made a bit of a rue just to add a wee bit more thickness to the broth and it was served with crushed crackers.
Yummy stuff. Unfortunately I didn't take a picture of it, but I am sure everyone knows what clam chowder looks like.

I'm glad your clam chowder was a success.
When I make soup I just put the ingredients in my soup maker and press start!

@porwest Yes! It makes creating soup much easier. Just put the chopped ingredients in, with some seasoning. Choose the setting (smooth or chunky) and press start. You can also do drinks on the drinks setting but I've never tried that. There's also a blend setting if you think it hasn't blended enough.

I roasted some baby white potatoes and hubby fried lamb shoulder in a cast iron skillet. And we had all that with sour cabbage salad on the side.

@LindaOHio I am sure I have never had their chicken. Definitely a burger and definitely a hot dog. But never chicken.

I love clam chowder and make it often. I use Snow's chopped baby clams for the most part, as I can't seem to chop up the whole clams little enough to suit my son. But they are the same price as the whole ones, so that works. I have never added beef broth to mine. I use the clam broth of course, and I keep a bottle of clam juice on hand in case I think it needs more flavor. But it sounds delicious on this chilly and gray day!

I actually use a couple of different recipes. This one is more of a quick go-to one. But more elaborate methods call for bacon and other stuff. I usually never use clam juice exclusively. I generally use several cups of liquid and would find that to be too "fishy." So I only reserve the liquid from the cans of clams which yield right around 1 1/2 cups of clam juice and I am usually good with that.

I don't usually need extra ''fish juice'' unless the pot of soup I am making is bigger than I intended it to be...I have a tendency to do that at times! Hey, did you know that corn (regular, frozen or canned) is super good in clam chowder? It truly is. Not a lot, just enough to add some taste and interest.

@MarieCoyle Not sure if I have ever put corn in clam chowder, but I can't imagine it WOULDN'T be good. I HAVE made a corn chowder soup which is almost exactly the way I make clam chowder except without the clams of course.

I tasted it while I was holidaying in the US, at a friend's place. I mentioned to another friend how I enjoyed it and every time she visited India she bought me a tin and now I do not like it anymore

@allknowing I guess. Clam chowder is just a personal favorite of mine, and I am not sure I have ever gotten a bad one. I have had mediocre ones, but never a bad one.

In my family my aunt was famous for her clam chowder. I've never attempted to make it myself but I'm quite skilled using a can opener and heating up some from a can

@porwest Every summer we would have a family day and my aunt would always bring clam chowder. Fun times. Since no one in my family really likes it I just buy Progresso and it hits the spot for the occasional craving. Nothing ever beats homemade soups.
Hope you got your roast into the crock pot.

@Marilynda1225 It was like that going to my grandpa's house. He always had a pot of bean soup when we got there. We lived hours away so it wasn't like he ALWAYS had a pot of bean soup on. lol. But it remains, to this day, the best bean soup I have ever had and have never been able to copy it.
As for the roast, it's still in the freezer. lol

And I bet there would be good reason for that. There are many ways to make clam chowder even if the recipe itself is fairly basic. I am trying to recall if I ever had a bad clam chowder and I can't think of a time. As for me, I just never use canned soups other than cream soups and tomato soup for use in other dishes. But when I make soup to eat, it's always from scratch.
You reminded me I have a roast in the freezer downstairs I need to drop that in the crock pot soon.
