I am so thankful to have a pantry full of food, and things that are already prepared in my freezer.
For lunch today, we had some chicken and stuffing I made about a month ago, and froze it, wrapped in foil after we had eaten a meal or two of it. I thawed it in the refrigerator, and that was our main dish. I have canned green beans in my pantry, so I added a few onion slices, and a little bacon grease to season them. I also found a jar of pickled beets.
Bob has been craving pickled beets.
It was a very fast lunch to prepare and Bob ate well and is now napping again.
It seems like a win all around.

It is a southern thing. If you like sweet pickles you would probably like them. I learned to eat them as an adult. When they are pickled things like cloves and allspice berries are in the brining solution.

I love having some meals in the freezer that can be on the table in short order. It often just helps so much. Glad that you and Bob had a nice dinner together.
