Summer salads

We are eating a lot of salads lately. That is a good thing.
The next salad I will make is a broccoli salad. There are lots of versions, usually with broccoli, cauliflower, bacon and cheese.
I do not have bacon on hand and do not feel like cooking bacon. I have tiny diced ham that I will use. I also like the version with chopped apples. In addition, some call for raisins, some call for dried cranberries, but I have dried cherries I will use.
Some people put chopped nuts in it, I will use sunflower kernels. The dressing is creamy and tangy, mayo or Miracle Whip, thinned with apple cider vinegar, or lemon juice. Just a bit of sugar as well.
I purchased broccoli florets and cauliflower florets that were reduced for quick sale. Gala apples on sale as well. I think I will add a little finely chopped celery. This will be the major part of our supper tonight.
We are moving into a big heat spell, so it is time to break out the cold meals.

I think it is. Of course I can put lots of unhealthy stuff in the dressing.

7:30 at night and it is 95 F. Could be worse, and will be worse as the week goes on.

My friend gave me a great recipe for broccoli salad. It takes a bit of preparation but is worth all the effort.

Your salad sounds scrumptious. I love broccoli. I can forego iceberg lettuce and just use broccoli. Have a good weekend.
