Remembered the Lime Juice / myLot

Made baked chicken tonight..I usually put lime juice in the seasoned butter I put under the skin..but forgot the last 2 times. I remembered tonight..OMG made such a BIG difference in the flavor. Also had one of those Pict Sweet roasted veggie pans. It had Brussel Sprouts, Corn, Onion, and Red Potatoes. I always put extra butter on it before I put it in the oven...I added a few pieces of Broccoli to it as it had more potatoes than veggies. Tomorrow is my yearly Mammogram. Prayers please.

I hadn't thought of adding lime juice to seasoned butter. What a good idea.

I learned that when I was in Mexico...The lime gives the chicken flavor a boost. I use Thyme, Rosemary, Paprika, and garlic salt in the butter..stir in the lime juice..then stuff it under the skin of the chicken. Take what butter is left over on my hands and rub it on the skin and even under the chicken qtrs. I do not measure the seasoning..I just put a glob of butter in my little plastic container..start shaking out the seasoning until it Looks good..add a few drops of lime juice. The only time I use measurements when I cook is if I have a New recipe and even then I might add or reduce what it calls for.

@Ghostlady My mother rarely cooked from a recipe too. Vince cooks a lot by taste and instinct.
