Corn flour vs rice flour

There is a particular sweet snack we make using rice flour, jaggery, ghee, cashes nuts...........The rice flour does not harden fast and it takes hours for it to be ready. I am now going to replace rice flour with corn flour and I know it will harden fast. I have done other goodies with corn flour such blancmange which hardens pretty fast. What you see in the image is a goodie prepared with rice flour.

I also use corn flour to make blancmange, I almost never use rice flour.

Rice flour is not used for blancmange I am talking of a sweet snack that is usually made with rice flour

@allknowing I understood and you mentioned blancmange and I commented that I ALSO use corn flour to make it. Some people use all purpose wheat flour.

While both of those flour can be used for making goodies but here in Bengal varieties of goodies are prepared with also malda.

Maida is avoided because of its gluten conent
