What's for din? Feb. 2. 2025

The kids ate with grandma earlier, and honestly, I just wasn’t feeling it today, so I wasn’t about to cook a big dinner. I asked Chris what he wanted, and he said tuna, so that’s what I made. Usually, I’d hardboil some eggs and chop them up for the tuna salad, but I didn’t have the energy for that. So, I just whipped up some plain tuna—threw in a bit of salt, pepper, and mayo. Chris made himself a sandwich, and I took about half a cup of the tuna, mixed in some ranch seasoning and shredded cheese, and called it a day. That was our dinner. What did you have at your place?

We had a big late breakfast that was labeled brunch, so for dinner we had potluck leftovers. I was hoping to get all the leftovers out of the refrigerator, but that didn't happen. I have plenty of spaghetti sauce left for another meal, maybe 2.

@thislittlepennyearns I agree, homemade sauce is much better than the jarred and canned stuff. I always add chopped bell pepper, banana peppers (in summer), sometimes celery, garlic and onions, along with Cajun seasonings, basil, oregano, etc.

We were stuck at the hospital visiting with mom and so when I got home I just threw a marinated pork loin into the oven and we had some leftover sides with it.
