I'm making the Garlicky Cuban Pork from the Skinnytaste web site. It has been marinating with garlic, grapefruit juice, lime juice, and garlic cloves since this morning. She has directions for both the Instant Pot and a slow cooker. I'm doing the Instant Pot version. I'm going to have it in flour tortillas as tacos with chopped cilantro, pico de gallo, and queso fresco. I might make some cilantro-lime rice too because I've been crazy hungry all day.
That's what is happening here. What are YOU having? I want to know!
