I made soup …..mmmm yummy ….

It’s been a while but i made some soup. As usual I bought too many veggies and I don’t like anything going to waste. So, the soup machine came out and with in 40 minutes, including peeling and chopping time, there was a huge pan of the most delicious soup.
Why people spend a fortune buying the tinned stuff I don’t know !
Popped a baguette in the air fryer and hey presto ! Crusty bread, to go with said soup !
What do you do with leftover veggies ?

I buy canned soup because I don't always feel like doing all the work making soup requires.
Same reason I bought breaded and fried chicken tenders instead of making them myself.
I only buy what veggies Pretty I will use so don't worry about anything being thrown away. (She, on the other hand, still has a bag of mixed greens in the fridge she bought a few days ago. If they start going bad, I'll throw them away since I don't eat salads.)

We never have left over veggies.
Honestly
That's because we make soup with our vegetables a before that becomes leftovers

The veggies are leftover from the weeks meals ….i guess I could have said unused
Have you not seen cards in the shops with Mom on them !
It’s the way my MOM spells it ….its good enough for me !

I usually just sauté them in olive oil, and then have at it. I remember once, like a decade ago actually, I would sauté asparagus, tomatoes, and squash with shrimp every night for three months. Just changing my dinner to that, I lost ten pounds. I should go back to that, but shrimp is a lot nowadays

I don't buy any fresh produce as I can't cook or bake anymore. Your soup sounds good.
