Egg and Cress sandwiches ……

I’ve just had one if the simplest lunches …..and it was sooooo tasty.
Two hard boiled eggs, chopped, salt and pepper added, and add chopped cress. Finish by adding mayo…..give it a good mix ….perfect sandwich filling.
I used farmhouse bread.
Oh my days it was delicious.
What’s your easy go to lunch …..?

I love egg salad. I get Meals on Wheels Monday through Friday for lunch. For dinner I usually have one of the sandwiches that J makes for me.

I hadn’t eaten eggs in a while …..not a conscience decision , just happened that way …..then The Mister got some from a farm shop and we had some for breakfast ….they were delicious. Shopping at a different farm shop at the weekend I saw some cress and that reminded me that I love a nice egg and cress sandwich….and I have ….yesturday and today.
All the cress has gone now, but I intend to grow some, it’s the easiest thing in the world to grow.

I love chicken soup….thats something The Mister and I have on a cold Winters day , with fresh bread…..

We always have some type of ham or turkey for sandwiches in the fridge. I add a slice of American cheese on potato bread and microwave it for a minute.

I don't think I've ever had egg and watercress sandwiches. I think of them as being very 'posh'.

Ha ha , it’s not very posh …..I don’t even cut the crusts off …..now, that’s posh !
I use cress not watercress , so it’s only small.
