Tonight I finally made homemade orange chicken and chicken fried rice. This meal is a regular in our rotation. Ever since I made it for the first time, it’s been one of Chris and the kids’ favorite meals that I cook. It’s not actually that hard to make, even though it does use quite a few dishes. I’ve changed the way I make the batter. I used to just use my regular fried chicken batter, but then I found a Panda Express copycat recipe, and that’s what I use now. Anyway, the older child is gone, so it was just the four of us tonight. That’s what we had for dinner, with either homemade ice cream or red velvet cupcakes for dessert. What did you have for dinner?
