Cooking for 1 Quick Meals...looking for ideas and recipes

I'm single and I'm always looking for quick, easy ideas and recipes for a simple meal. I don't like to cook a lot for a meal, and don't like to have to spend a long time in the kitchen. I'm looking for ideas and recipes for cooking for 1. Anyone ?

When hamburger is on sale I buy several pounds brown it all and season it. then I drain the grease and freeze the hamburger in quart size bags fill the bag and flatten it removing the air. Microwave the hamburger for 2 minutes and it is hot and ready to use for any dish. since the bags are flat you can put a lot in the freezer as well as thaw quickly. I also freeze my left over spaghetti sauce for the next week, this would work great for small meals for 1. other ideas that would freeze well - in small containers lasagna beef and noodles, chicken and noodles stew meatloaf there are ton more ideas this is what I can think of easily right now. look on the web for freezer friendly meals and OAMC - once a month cooking to get great ideas and you could down size some of their recipes too.

let me know what you think of this one. Bacon Cheeseburger Chili 1 pound lean ground beef 1/2 large onion, finely chopped 2 garlic cloves, minced 1 1 1/4 ounce package of chili seasoning 1 16 ounce jar of chunky salsa 1 14 1/2 ounce can of diced tomatoes, undrained 1 14 1/2 ounce can of beef broth 1/4 cup of smoky BBQ sauce 1 15 ounce can of kidney beans, drained 3 tablespoons of prepared mustard 1 8 ounce package pasturized cheese [velveeta], diced 6 slices of precooked bacon, diced 1.] In a large, heavy saucepan cook beef onion and garlic over medium heat until beef is cooked though and onion is translucent 2.] Add chili seasoning mix, salsa, tomatoes, broth, BBQ sauce, beans and mustard to saucepan; cover and simmer 10 minutes 3.] add cheese and stir until melted. Serve in bowls of chili garnished with diced bacon

I don't live alone at the moment, but what I used to do was just prepare a normal-sized meal, and then freeze them in those nifty Glad containers, or the like, and nuke them when I felt like eating it and have my mini-meal ready-to-go. I always found it difficult otherwise, trying to find a decent meal to eat or finding even just packages of meat and the like for single servings, without going for a TV dinner. Recipe-wise, one that I like to do is taco salad. It's filling enough but let's you pretend you're being somewhat healthy with the salad part lol. Anyway, it sounds kind of gross to anyone who hasn't tried it, but whenever I've made it for people they've loved it and have gone for 2nds and 3rds, plus it's easy and quick to make, and you can just freeze the meat afterwards for another time. - 1 package of taco seasoning - 1 pound of ground beef or turkey - 1 head or package of lettuce (iceburg) - tortilla chips or dorritos (my preference.) - Wishbone's Western dressing (available in fat-free) or Sweet and Spicy dressing, which are like a zesty french dressing. Prepare beef or turkey as directed on taco seasoning. Crumble chips onto plate in bite-sized pieces, or whatever your preference is, then the same with lettuce. Pile on meat, adding whatever toppings you'd like, such as shredded cheese, etc. Top off with dressing, which really helps the dish, I think. A nice complement is buying a package of sweet corn mix to bake a little bit before you start on the salad, if you can find it.

sounds great to me...and i like being able to freeze leftovers for quick use as a lunch or dinner when i'm just too tired to do anything....thank you so much

spaghetti is quick and easy. I also like the Betty Crocker meals where you add the chicken or the pork chops and throw it in the oven for 20 minutes. I wish I could cut and paste, I would give you some good recipies. But I have to get 500 posts before I can do that. Campbelss Soup has a website where you can select what ingredients you have in your kitchen and it will spit out a list of recipe options for you to choose from. It's pretty cool.

Taste of Home Magazine has another magazine called Cooking for 2. I get this. It has GREAT recipes in it.
