Lemon Chicken Anyone!!

Lemon Chicken Makes 4 servings 1 teaspoon lemon zest grated 1/4-teaspoon salt 3 tablespoons fresh lemon juice 1/4 teaspoon freshly ground black pepper freshly ground 1 1/3 tablespoons peanut oil 1 large red bell pepper cut into thin strips 1 clove garlic cloves minced 1 teaspoon ginger root pared, minced 1 lemon zest lemon 16 ounces skinless boneless chicken breast cut into 4 equal pieces Combine zest, juice, oil, garlic and ginger; add chicken and marinate at least 1 hour or overnight. Prepare grill for a medium fire, using direct method; spray grill basket with nonstick cooking spray. Remove chicken from marinade with tongs; drain marinade into small saucepan. Bring to a rolling boil; boil for one minute, stirring constantly. Remove from heat. Season chicken with salt and black pepper and grill 8 minutes, turning once, basting with marinade, until cooked through, grill pepper strips in grill basket about 6 minutes, until slightly charred. To serve, place one piece of chicken on each of 4 plates, scattering one-fourth of pepper strips over and around each. To decorate even more, peel zest from one lemon and arrange lemon strips over chicken breasts.

I will have to try this one soon. I have the chicken, and can get the lemon and red pepper easily. Thanks for posting.

I love lemon chicken, Kathy, but I cheat. I use a packet of Lee Kum Kee ready made lemon sauce. It is very rich and full of flavour, but I add plenty of ginger as well.

I have not made mine this way. I will try your receipe next time. I am sure I can use this with my George Foreman Grill.
