Oatmeal Spice Cake - Snack Cake Mix

Years ago, when I was a child, we had a neighbor who made the best boiled coconut topping on oatmeal cake. She would not give anyone her recipe. I was so pleased when I finally came upon this recipe because it tastes just like hers. I ultered it a tad to make it healthier for my family. I hope you enjoy it. You will need to make the Snack Cake Mix recipe found here. http://www.mylot.com/w/discussions/589482.aspx before you make the cake itself. The topping is the key to this great tasting cake. Oatmeal Spice Cake ¾ cup rolled oats 1 ¼ ups boiling water 1 package SNACK CAKE MIX http://www.mylot.com/w/discussions/589482.aspx 1 egg 1/3 cup olive oil 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 1 teaspoon vanilla extract ½ cup chopped nuts ½ cup raisins Preheat oven to 325. Pour rolled oats into a small bow. Stir in boiling water, set aside. Pour SNACK CAKE MIX in an ungreased 8 - 9 inch square baking pan, set aside. In a medium bowl, combine egg, olive oil, cinnamon, nutmeg, and vanilla. Stir in nuts and raisins. Beat with fork to blend. Stir in softened rolled oat mixture. Stir into Snack Cake mix until evenly distributed. Bake 45 minutes until a wooden toothpick comes out clean. Spread topping (recipe below) evenly over cake as it comes from the oven. Turn oven to broil. Place cake in oven 3 inches below broiler. Broil about 2 minutes until frosting bubbles. Boiled coconut topping 4 tablespoons butter 1/4 cup brown sugar packed 2 tablespoons milk 1/2 teaspoon vanilla extract 1 /2 cup shredded coconut 1 /2 cups chopped nuts In a small saucepan, melt butter. Stir in remaining ingredients

I love it that you have so many recipes for the snack cake. This year I am going to be even more frugal with my gifts. Life is short and I need to think about our future fiances as well. Frugal gifts are the best gifts. Even though you do not spend a lot on them, people still appreciate them.

I totally agree. Everyone is always pleased with my homemade gifts and now they even hint on the kinds they want. It is so funny. They have no idea that is is this easy to make and frugal too.
