Okay weight loss buddies - here is the valentines day menu ..complete with recipes
Roasted Pork Tenderloin with Pear Chutney

1/2 cup orange juice
1/2 cup apple cider vinegar
2 Tbsp unpacked light brown sugar
1 tsp ground coriander
1/4 tsp ground cinnamon
1/4 tsp ground cloves
4 medium pear(s), ripe, peeled, cored and cut into 1/2-inch pieces
1/2 cup red onion(s), minced
2 tsp ginger root, fresh, minced
1 pound lean pork tenderloin
1/2 cup raisins
1 sprays cooking spray
Instructions
Combine orange juice, vinegar, sugar, coriander, cinnamon and cloves in a medium saucepan. Add pears, raisins, onion and ginger; mix well. Set pan over medium-high heat and bring to a simmer; reduce heat to low and simmer until chutney mixture is thick and dark, stirring frequently, about 20 to 30 minutes.
Preheat oven to 400ºF. Coat an 11 x 7-inch baking pan with cooking spray. Transfer pork to prepared pan. Set aside half of chutney and spoon remaining chutney all over pork; roast until an instant-read thermometer inserted in the center of pork reads 160ºF, about 20 minutes.
Allow pork to rest 10 minutes before slicing crosswise into rounds. Serve pork with remaining pear chutney on the side. Yields about 3 ounces of pork and 1/4 cup of chutney per serving.

Roasted Beet Salad

Tangy citrus salad is a delicious complement to sweet roasted beets. The combination is a lovely addition to a Valentine's Day menu.
1/2 pound beets, red (about 2 medium)
2 tsp olive oil
1 medium tangerine(s), peeled, divided into segments, pits removed
2 Tbsp red onion(s), chopped
1 medium stalk celery, chopped
2 tsp white wine vinegar
1/4 tsp dry mustard
1/4 tsp table salt
1/4 tsp black pepper, freshly ground
Instructions
Preheat oven to 400°F.
Place beets on a large piece of aluminum foil; drizzle with oil. Fold foil to form a tightly sealed packet. Place packet on a baking sheet and roast until beets are tender when pierced with a fork, about 1 hour.
Cool beets for 10 minutes, open packet (be careful of escaping steam), slip off beets' skins with a paring knife and cut into 1/2-inch cubes. Place beets in a serving bowl. Add tangerine, onion and celery; toss gently.
Whisk vinegar, mustard, salt and pepper together in small bowl. Pour over beet mixture; toss and serve immediately. Yields about 1/2 cup per serving.
Notes
Substitute a grapefruit for the tangerine, if you prefer.

Mushroom and Spinach Couscous

You can whip up this gourmet-like specialty in no time: The couscous cooks in a flash, so it's the perfect last-minute side dish or light meal.
2 tsp olive oil
1 medium garlic clove(s), minced
5 oz portobello mushroom(s), stems removed, coarsely chopped
2 cup spinach, fresh, stems removed
1/2 tsp dried oregano
1 1/3 cup uncooked couscous
2 cup water
4 oz reduced-fat feta cheese, approximately, or 1/4 cup
Instructions
Heat oil and garlic in a large skillet over medium-high heat. Add mushrooms and cook 1 minute.
Add remaining ingredients, except cheese, and bring to a boil; cover and remove from heat. Let stand for 5 minutes; fluff with a fork and sprinkle with cheese. Yields about 1/2 cup per serving.

Chocolate Crème Brûlée

This showy, French-inspired dessert will wow all of your dinner guests. And the best part is that it doesn't require any special equipment: The sugary glaze is cooked right on your stovetop.
3 large egg(s)
1 large egg yolk(s)
1 1/2 cup sugar
3 Tbsp unsweetened cocoa
1 oz unsweetened baking chocolate square(s)
2 cup fat-free creamer, such as fat-free 1/2 and 1/2
1 tsp vanilla extract
1/4 cup water
Instructions
Preheat oven to 300°F. Fill the bottom of a roasting pan with 1 inch of water and place in oven.
Whisk together eggs, yolk and 1/2 cup of sugar in a medium bowl. Combine cocoa, chocolate and half & half cream in a small pot.
Heat chocolate mixture over medium heat, stirring occasionally, until chocolate is melted and steam rises from surface, about 4 to 5 minutes; pour into egg mixture, whisking constantly, then mix in vanilla. Divide among 8 small custard cups; place cups in roasting pan and bake until almost set in the middle, about 1 hour and 15 minutes. Remove from oven and chill for at least 3 hours.
When cups are thoroughly cooled, mix remaining 1 cup of sugar with 1/4 cup of water in a saucepan over medium heat; heat, gently swirling pan occasionally off heat, until sugar dissolves, about 4 minutes. Increase heat to high and cook until mixture is an amber color, stirring occasionally, about 10 minutes. Remove pan from stovetop and place bottom of pan in cold water to stop the cooking process.
Coat a tablespoon with cooking spray. Drizzle 3/4 tablespoon of sugar mixture over each custard cup, tilting cup to spread glaze evenly. Serve immediately.

The pork tenderloin sounds great! The beet thing will not be one that I make. Beets are not my favorite. Yuck. Love your recipes. Keep em coming!

I know and I love pork tenderloin. At Sam's club it is $2 a pound, Which is hard to beat.
