Does anyone know any good recipes with dill?

I have been given some dill by a friend and all the recipes I can find for it either involve meat or fish. Does anyone know any vegan recipes that use dill as I don't know what it would go with.

Dill is great on roasted vegetables. Toss some carrots and potatoes with olive oil and chopped dill and put them in the oven. It's delicious.

Michelle - do you like leeks? If so, maybe you would like this one. The ingredients given are for 6 people, Ingredients 8 medium sized leeks 2 medium onions 1 x Clove garlic 1 large tomato 2 tsp olive oil 1/2 cup Vegetable Broth Salt and pepper to taste 4 sprg fresh dill chopped Method : Rinse leeks under cool running water. Halve them lengthwise, peeling off the tough outer layer and including about 2 inches of the green tops. Rinse them again. Slice onions, chop garlic, and peel, seed and chop tomato. In a skillet, saute onions and garlic in 2 tsp olive oil 2 minutes. Put onions, garlic, leeks, tomato and stock into slow-cooker; cover and cook on low for about 6 hours. Salt and pepper to taste at end of cooking. Garnish with chopped dill at serving time.

I love leeks. I don't have a slow cooker, but I'm sure I would be able to find a way of cooking a leek stew with dill. Thanks.

HONEY DILL PICKLES: 10 cucumbers, sliced 1 lg. onion, sliced 1 to 3 cloves garlic 1/4 c. pickling salt 2 c. honey 2 c. apple cider vinegar 1/2 c. water 1 tbsp. salt 1 tsp. turmeric Fresh dill Combine cucumbers, onion, garlic, pickling salt; let stand several hours. Heat to boiling honey, vinegar, water, salt and turmeric. Add drained cucumber mixture. Bring to boiling point again, but do not boil. Pack in hot sterilized jars, add 1 head of dill to each. Seal; process in boiling water bath 5 minutes. I hope that u'll try this recipe and will enjoy it.

Sometimes my husband will make nuggets made from split peas, yams, onions, and celery cooked till mush then mixed with wheat gluten and lightly pan-fried or baked. they make excellent homemade alternatives to the veggie nuggets you can buy at the store, but are SO much cheaper, and just as delicious a snack. anyway, we make a dipping sauce to go with that is made with yogurt -you could use plain soy yogurt- mixed with lots of dill, garlic powder, salt, dried basil, and whatever other herbs you have around. Just adjust seasoning to taste and you have a homemade 'ranch dip'. I would also suggest that you try using dill in a potato-salad or tofu "egg salad" to go on sandwiches. Sounds good to me!

I'm not exactly sure of any recipes but my mom always puts dill into alot of foods like boiled or roasted potatos and all types of soup. She uses it so much that she kind of turned me off from it!

here's one Tuna Pasta Salad with Dill SUBMITTED BY: geebow "Great tuna pasta salad with dill, perfect for summer parties and potlucks." INGREDIENTS 1 (16 ounce) package small uncooked seashell pasta 1 1/2 cups mayonnaise 1/2 cup milk 2 tablespoons pickle juice 2 teaspoons dried dill weed 1 teaspoon salt 1/8 teaspoon ground black pepper 2 (6 ounce) cans tuna packed in water, drained 1/2 cup chopped onion (optional) DIRECTIONS Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. In a large bowl, whisk together the mayonnaise, milk, pickle juice, dill, salt, and pepper. Mix in tuna and onion. Toss with cooked pasta. Cover and refrigerate 1 to 2 hours before serving.
