What if it's all a lie?

How would we know if everything you've ever been taught was not true? What if life really is like the Truman Show or the Matrix? If all the scientific theories were false, would there be any way of knowing that? How can we know anything is true?

If something we believe is true and turn out to be false later on then we will just to accept that it was wrong after all, it will not make us a lesser person and we don't lose anything, merely a change of thinking.
Some proven scientific theories and accepted as true can not be untrue in the future. If one jumps off a building, he will have to face the scientific fact about gravity and the consequences of his action. Mathemathical truth that 1+1= 2 will never change.
Some truths can be reduced to simple logical statements others may require faith for want of concrete proofs yet.

What would it mean if science itself were false? What if the universe is really about seven feet past the peak of mount everest? What if the sun is really a light bulb on the ceiling that someone has to remember to turn off every day? I don't believe anything like this, but I was wonderring how we could even know if a thing is true or not true. Mathematics is a great example of a self consistant truth, but, beyond balancing my check book, what does it mean to me deeply?
