Hamburger veggi soup

1/2 pound ground beef 1 tbs. fat 1 cup canned tomatoes 1/2 cup diced carrots 1/2 cup diced celery 1 chopped onion 1/4 cup parsley 1/2 ts. pepper 1 cup diced potato 1 1/2 cups water 1 tsp. salt Brown ground beef in fat. Add remaining ing. and simmer until veggies are tender. You can add noodles as an option.

We make this all the time. I dont use a recipe so I am not sure how much of each thing I add. I just add till it looks and tastes right. I do not add fat. I use olive oil instead and I brown ground chuck in the olive oil. I dont use hamburger as it has too much fat in it to start with. I grind my own chuck roast into ground chuck.

Another nice one, and again I will substitute the noodles for barley. I might give this a try at the weekend.

When I did home education in my last year of high school we did a soup receipe very similar to this. I used to cook it all the time. I haven't made it for several years. Thanks for reminding me.
