Mmmm Pickled Eggs

Pickled Eggs - There are so many ways people make pickled eggs, and they all are so tasty. mmmmm. Are these an American Treat or are they loved around the globe?

I find it difficult to stop eating pickled eggs once I start. If the eggs were fried or scrambled 2 would satisfy me greatly, but pickled I really have to be careful to not eat several. I make them differently every time - sometimes I will use a bit of leftover pickle juice along with the fresh vinegar. I add different spices according to my mood at the time, and I like to add some hot peppers for Zing! a little beet juice gives a nice pink color to the eggs. One thing that I always do is boil the vinegar and add it to the eggs while it is pipeing hot. The eggs seem to absorb the vinegar quicker this way and it is not such a long wait for them to be pickled. I put the spices right in with the vinegar when I boil it so the flavors are infused. I like to use apple cider vinegar and a bit of sugar. How do you make your pickled eggs?

I've never heard of this before but think I might like this . I love pickles especially the dill pickles . How do make them exactly , can you just put them in the dill pickles juice to let them soak in the flavor or do you have to do more to them ?

you certainly can do that. First boil your eggs and peel them. You can add them straight to your dill pickle juice but it will take a week to get the pickle juice absorbed through. If you boil your pickle juice first (put the eggs in the pickle jar while you are boiling the juice) and then pour it over the eggs the pickling will take less time (I usually start eating them the next day because I am so impatient, but by 3 days they should be pickled through) I do up a gallon jar of eggs at a time they last a good long while in the fridge. They are also good in making egg salad sandwiches.
