Seafood Nachos, The Best

My husband invented this as a quick meal or as a last-minute party food. I love it,and I usually have everything on hand to make it: bag of tortilla chips (we like the round ones) at least a lb. of cheddar cheese (can also mix in some monterey jack), shredded 1/2 to 1 lb. imitation crabmeat, or cooked shrimp cut into bite-size pieces, or langostinos if you can find them green onion, sliced tomato, chopped black olives, sliced Other toppings; sour cream, guacomole, jalepenos, salsa Use a microwaveable plate for individual or a platter for a party. Put some nacho chips on the plate, put on some of the cheese, seafood, green onion, tomato, and black olives, layering with more chips. Put on as much as you like, but its really good the more cheese you put on. Layer the chips and other stuff. Microwave the plate of chips until cheese melts. Have the other toppings on hand to serve with the nachos. If you make a big platter of this, you can cut up serving size wedges of it. If you don't like seafood, you can always substitute cooked ground beef.

He just puts crabmeat, either lump, or from a can, with some old bay seasoning, and some shredded cheese and cooks it in the oven at 350, until the cheese melts it is incredible!

Oh wow, this sounds great! I love seafood. This would be a hit in my family. I do like nachos, but tire of beef. Great alternative.

This sounds sooo good! I'm the only one in my family who likes seafood, but I have several friends who share the love for all things seafood!

The great thing about it is that its easy to make a little or a lot, and you can put only what you want on it.

Thanks for the comment. I'll post some more recipes soon. I mess up the kitchen when I cook too, but I don't care.

I like it better with the shrimp. I usually make it with the crab because it's easier, though still good.

I saw this and had to reply to it. I don't like seafood, but my son and his wife, and even my hubby, they are seafood lovers. They live, eat, breathe and love seafood, especially shrimp and crawfish!! This recipe is great. Thanks for sharing it with us on mylot :)

Let me know how they like it. You could make a plate for yourself with grilled chicken, or anything you like. That's what's great about this.
