What To Do With Egg Plant?

Deborah L. Alten @gtargirl (5376) • United States 25 Aug 08

My mom slices egg plant and fries them in some sort of Indonesian concoction which I can never duplicate. Does anyone have a simple recipe with egg plant in it? I love the taste and it's apparently very good for me.

Deborah L. Alten I am definitely trying th lasagna recipe. I've made a veggie lasagna before but never thought of adding egg plant. It's going to be great. Thanks Bronie.
