What's For Dinner?

It is always the same question at our house... what are we going to have for dinner tonight. Every night it gets harder and harder to decide on something different. It is the same old walk to the kitchen, glance through the refrigerator, the freezer, the cupboards and the pantry, and still have no idea what to make for dinner. Have you ever felt that way? Anyway, I finally decided to make a casserole from the contents of my refrigerator, freezer and cupboards. === Chicken & Broccoli Casserole * Cut into bite size pieces enough boneless skinless chicken breasts (approximately 3-4 pieces) to cover the bottom of a 9 x 13 cake pan * Cover that with a 16 ounce bag of your choice of frozen broccoli, cauliflower, or winter mix vegetables * Next comes a layer made from a box of stove top stuffing (generic brands work fine) prepared * Top this with a layer of your choice of shredded cheese * Add a few pats of butter to the top Cover with foil, then place in a 350 degree oven for about an hour until the chicken is completely done. ==== Does anyone else have any good ideas or easy recipes for something different for dinner? Hopefully it might be something made from things that I might already have on hand, but I'll settle for just about any new ideas right now. I am really getting tired of the same old things.

I get the same question at my house too. What are we eating tonight? What's there to eat? lol I agree sometimes I don't have any idea about what I am going to make and usually in those times we end up buying pizza or taco bell burritos. I will copy your recipe and will try it one day. Thank you for sharing. Here is a recipe that is easy to make: I make rice the ordinary way and let it aside. In a pot I put some oil, hamburger meat, chopped cilantro or parsley, onions cut into small pieces and chopped garlic. I let it fry until the onions are cooked and then I add fresh spinach or in a can if I don't have fresh spinach. I add seasoning: salt and black pepper. Let it cook for around 10 minutes. You just take some rice and add a little of that spinach sauce on the top with some lemon juice if you like it. My English is not that good especially when writing recipes. Have a good day!

We don't have a taco bell here, but when we give up trying to figure something out it usually ends up either being subway, pizza or burgers. It gets boring after a while though. I understand your English perfectly, and your recipe sounds delicious. I will copy it down and give it a try.

Yes sometimes it is extremely difficult to think of what we are going to have for dinner. Yes I have done this many times to look everywhere trying to decide what to cook for dinner. Oh I have many recipes through my discussions but I cannot add it here but if you are interested in my recipes then please feel free to have a look as you may find something that you would be interested in cooking for a change.

London broil is good, and it's always good to find a way to use leftovers. I think that many of us are tired of cooking the same things repeatedly. That was the idea that inspired this discussion.

I like to have rice and lentils and it is really easy to cook and to make variations. For every part lentils and rice you need two parts water. For example, one cup rice and one cup lentils - needs four cups of water. Get to a strong boil and turn off the heat and cover for 45 minutes until tender. You can put in virgin olive oil, paprika, salt, pepper, etc. for flavor. You can add any type of vegetable or dried fruits like dried cranberries or raisins. It is super healthy and very easy to make.

I guess there must be a lot of different variations you could make with this. Thanks for the ideas.

We love spaghetti, but unfortunately we have that quite often so we are looking for new ideas before we get too tired of it. Thanks for your response.

I think that I shall add this to the Notepad. We do lots of broccoli and chicken is a common meat ingredient. We had KFC tonight. I appreciate the sharing of this recipe for an easy meal that is pretty good for you. Quite tasty that would also be filling. We like a whole chicken in the roast pan with vegetables and plenty of garlic and water. Tesnt with foil and then roast and eat it when it can be removed after the same hour. Whole wheat bread rolls would help complete our meal without any cheese or butter added unless butter on the rolls. We like to soak up pan juices with bread. Yummy.

One thing that I like to make is super easy if you have a crock pot. Get a few boxes of scalloped potatoes and prepare it on the stovetop - just until the butter melts and things are a little combined. Add a little extra cheddar cheese to it and dice up some ham and toss it in. Put it in the crockpot and a couple hours later you have a delicious 'meal' - at least that's how we eat it. You can also add bacon to it if you like it. I usually do three boxes of scalloped potatoes and about a pound of diced ham.

I think it must be the weather. We were at a loss for lunch as my husband had to work tonight so we did not have dinner together. We finally just decided to make a pizza. I know it is ho hum but neither of us felt like a big meal and it is sunday so we try to not cook much on sunday. Good luck with finding something good. LOL

It wouldn't be so bad if it were just like this once in a while, but it seems to be this way every night lately. Nobody knows what they want because we are all tired of everything. Food is just getting so boring.

I hate trying to figure out what is for dinner and when I ask what everyone else wants I get the same answer,"I don't care". However; they do care because if you fix something they don't like, they will complain about it! For dinner, I was thinking about grilling turkey burgers and fixing corn on the cob, 3 cheese macaroni and deviled eggs. The weather is great here today so it is outside cooking for us!!

I know what you mean, when the weather is too warm to cook inside, I just open the doors and windows, go outside where the weather is nice and go ahead and cook inside anyway. The heat from cooking is in the house while I am outside enjoying the weather. We eat outside, and by the time we are ready to go back in, the house has (hopefully) cooled back off. Your dinner sounds good. It's beena while since we have had corn onthe cob.

It's been so warm today that I have no desire to cook, but I would like to barbeque. I would love some good old fashioned hamburgers and cole slaw and macaroni. Your dish sounds deliscious and I may try that some time.

That is what we had last night because it was so beautiful outside. Actually, I think I probably spend half of the summer barbequing. I love the taste though, and it is so much more comfortable cooking outside on a hot day.
