Speaking of Hill folk
Heh, I've got this old cookbook (circa 1881)that has some down home favorites in it.
How 'bout this one?
Roast O'Possum -
When nicely dressed lay in a pan, cover with cold water, add 1 cup of salt, soak over night. Drain in morning, cover inside and out with dry cornmeal, let stand until time to cook for dinner, then rinse and parboil in slightly salted water until tender. When tender put some pepper rubbed inside and outside, then put on dripping pan of roaster. Bake. while cooking baste well with butter. cook 30 minutes.
Is your appetite whetted yet? no?
How about Fried Brains?
Soak brains in salt water, then peel the skin off, put 1 TBS lard in skillet, when hot drop in brains and as they fry chop them up with spoon. When they have fried for 10 minutes, break into skillet 5 eggs beaten for 2 hog brains or 1 beef brain. Add 1/2 teaspoon of salt and little pepper, serve hot....
not to your liking?
you could parboil them, roll in eggs well beaten, then in cracker crumbs and fry in hot fat,
or perhaps you would have a hankering for some Scrapple....

LOL you make food sound yucky! LOL
I am a real country gal. We do eat squirrel brains. In fact it was my Granddad's favorite part of the squirell.
We dont eat opossum but we do eat ground hogs and many other wild animals.
Can you imagine what kinds of food they were forced to eat in 1881 out of necessity. We are so very fortunate today. I myself am greatful that we do have more food than they did.

it is a good thing that you can not only stomach such foods, but have the know how to procure and prepare them as well. Those may be very handy survival skills in the future.
As I read some of these recipes I can't help but think of Amelia Bedillia and how she would prepare them (or herself)
when nicely dressed, lay in a pan....lol.

I have a passion for old cookbooks and I've never been able to find one. I'd love sitting with you over a cup of coffee and I'd love top see this cookbook. Cherish it !!!

Hilarious. This post + my post about eating in front of the computer = priceless. I've never had roasted possum, but while living in mississippi as a small child, I was offered squirrel. I declined (horrified). But I've eaten frog and tripe, so I think it was just the image of a steak with a squirrel tail coming out of it that made me decline the offer, lol.
Amelia Bedelia would have a field day with these recipes!

I will have to take a look at your post! Wouldn't Amelia Just have a ball! I am glad someone knew who I was speaking of, hehe. My father used to squirrel hunt when we lived in upstate new york, Mother always stewed the meat and made things like well, stew or pulled meat barbeque. I did not care for it, to me it tasted tough and gamey. I am not too sure I could stomach tripe. (lol, just noticed the pun *stomach* )

You know, I USED to like you. LOL That was really gross and I swear I am sitting here right now fighting back the urge to hurl. What on earth possessed you to post that... ewwww. Now I gotta try and get my stomach back down where it belongs. That was just cruel and unusual punishment.
