Do You Make Homemade Bread For Road Trips? - Recipe Included

I love fresh fruit and I also love homemade bread. A friend made a wonderful loaf of cranberry oatmeal bread. I loved it but all I could think of what how good that would taste with blueberries in it. So I made a loaf with half blueberries and half cranberries. It was not very good. I decided to try all blueberries and add another egg and some walnuts. It was wonderful. It was moist and tasteful and healthy as oatmeal and blueberries are both good for you. Thus Blueberry Walnut Oatmeal Bread was born. This is a great road trip bread as it stays intact and is filling without being heavy. Great for picnics. I find we tend to snack on fresh bread while we talk. This recipe is for one loaf of bread. Here is my revised recipe. Blueberry Walnut Oatmeal Bread 2/3 cup packed brown sugar 3/4 cup milk 1/2 cup vegetable oil 2 eggs 2 1/4 cups all-purpose flour 1 cup Oats (quick cooking or old-fashioned) 3 teaspoons baking powder ¾ teaspoon ground cinnamon 1/4 teaspoon salt 1 cup fresh or frozen (thawed & drained) blueberries ½ cup chopped walnuts Heat oven to 350ºF. Grease bottom only of 8 or 9inch loaf pan. In large bowl, mix brown sugar, milk, oil and eggs. Stir in remaining ingredients except blueberries; beat 30 seconds. Fold in the drained blueberries. Pour into loaf pan. Sprinkle with additional oats if desired. Bake 45 - 55 minutes or until toothpick inserted in center comes out clean. Cool for about 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely before slicing. Wrap tightly and Enjoy

I just love blueberries in any recipe or fresh. I can eat a quart of fresh berries and still want more.

This sounds great if you like blueberries, my husband does so I will probably try it out for him. I was wondering do you think I could use strawberries instead? I absolutely love strawberries and I also love oatmeal (my fave kind of cookie), I would think that would be some wonderful bread.

That sounds delicious. It must be fairly high in calories but if you are walking a lot then that wouldnt matter on a road trip. I think I might try something fairly similar though I would probably try to use a lot less sugar as I havent got a particularly sweet tooth. We have bilberries growing on teh mountain behind us, when they are ripe later in teh year I will try it with them .

I love blueberries. I cant wait to give this one a try. It doesnt have alot of sugar either so I think my husband could eat it without a problem. Thanks for another great recipe.

Blueberry Cheese Rolls Ingredients: 1 pkg. (8 oz.) refrigerated crescent dinner rolls 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened 2 Tbsp. sugar 1/2 cup blueberries, divided Directions: PREHEAT oven to 375ºF. Unroll dough into four rectangles; firmly press perforations together to seal. COMBINE Cream cheese and sugar; spread onto dough rectangles to within 1/2 inch of edges. Top evenly with blueberries. Bring opposite corners of rectangles together; press together to seal. Place on ungreased baking sheet. BAKE 11 to 13 min. or until golden brown. Substitutions: Substitute 1/2 cup chopped red or green apples and 2 Tbsp. raisins for the blueberries. Substitute Neufchatel Cheese for Cream Cheese.

I love blueberries, but am not a big walnut fan. Could I substitute with pecans?

Any kind of nut would work well or you can eliminate the nuts all together. Have fun and enjoy your bread!
