Winter is about to hit us down under, so I want to start making some soups for dinner. The current soups I make are Leek and Potato, Sweet Potato and Rosemary, and Corn Chowder. I particularly want recipes that are vegetable based. Or if anyone can recommend a good soup cookbook. I can find ones that have one or two recipes I like the sound of, but thats about it....

Radish Top Soup SUBMITTED BY: Laura Nason "This is an easy recipe that uses an unlikely part of a vegetable we love to eat. It's thick and rich, and so hearty. I recommend eating it with a loaf of crusty bread!" INGREDIENTS 2 tablespoons butter 1 large onion, diced 2 medium potatoes, sliced 4 cups raw radish greens 4 cups chicken broth 1/3 cup heavy cream 5 radishes, sliced DIRECTIONS Melt butter in a large saucepan over medium heat. Stir in the onion, and saute until tender. Mix in the potatoes and radish greens, coating them with the butter. Pour in chicken broth. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes. Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth. Return the mixture to the saucepan. Mix in the heavy cream. Cook and stir until well blended. Serve with radish slices. Ground Turkey Soup SUBMITTED BY: Tammy Zosh "Quick and easy "warmer" for those cold days!" INGREDIENTS 1 pound ground turkey 8 cups water 8 cubes beef bouillon cube 4 potatoes, peeled and cubed 2 carrots, sliced 1 small head cabbage, shredded 1 cup pearl barley DIRECTIONS In a large pot, combine water, bouillon, potatoes, carrots, and cabbage. Bring to a boil. Lower temperature, and simmer. In a separate saucepan, brown the turkey. Put in pot with other ingredients. Slowly simmer for 1 hour. Add barley for last 15 minutes of cooking time. Serve. Cream of Broccoli Cheese Soup I SUBMITTED BY: Lisa "Our favorite anytime soup. Very quick and easy." INGREDIENTS 2/3 cup chopped onion 1 tablespoon margarine 5 cups chicken broth 1 (8 ounce) package wide egg noodles 1 (10 ounce) package frozen chopped broccoli 1 clove garlic, minced 6 cups milk 12 ounces shredded American cheese DIRECTIONS In a large saucepan, saute onion and garlic in butter or margarine over medium heat till tender. Add broth, and bring to a boil. Reduce heat, and add noodles. Cook for 3 to 4 minutes. Stir in broccoli. Cover, and cook for 5 minutes. Stir in milk and cheese. Heat slowly, stirring, till cheese melts. DO NOT BOIL. Serve immediately.

I just made black bean soup and it was fantastic. I boiled the bone and some left over ham until the bone was clean. Removed the bone and added to the pot chopped onions and garlic. Then I added a bag of black beans that I had soaked over night in water. Just drained of the water rinsed them and poured them into the boiling broth. I gently let the soup cook for about an hour or until the beans were tender. I served corn bread with it it was fantastic.

I've never made these but they sure do sound delicious!! If you decide to try them let me know how they turn out! i will do the same. Vegetarian Soup Recipe #1: Corn Chowder Creamed corn - 1 can (300ml) Frozen corn - 1/2 cup Olive oil - 1 teaspoon Potato - 1 (peeled and diced) Small white onion - 1 (diced) Celery - 1 stalk (diced) Red pepper - 1/2 (diced) Chili pepper flakes - a pinch 2% milk - 1/2 cup Vegetable soup stock - 1 cup Salt and pepper - add to taste Heal oil to medium and cook the onions, potatoes, celery, red pepper. Add in salt and chili pepper. Cook for 3 to 5 minutes. Pour in soup stock, and bring to a boil. Simmer for 8 to 10 minutes until the potato is soft. Add in the creamed corn, milk, frozen corn, salt, and pepper. Let it simmer for about 3 to 5 minutes and serve. Vegetarian Soup Recipes #2: Tortellini Bean Soup Cheese filled tortellini - 250g Carrots - 4 (peeled and chopped) White onion - 1 (chopped) Tomatoes - 2 medium sized (diced) Canned black beans - 1 cup (drained) Minced garlic - 1 teaspoons Dried basil - 1 teaspoon Bay leaf - 1 Vegetable soup stock - 3 to 4 cups Salt and pepper - add to taste Vegetable oil - 2 tbsps Heat oil to medium, and cook the carrots, onion, garlic, and tomatoes. Add in basil and bay leaf. Cook for 5 minutes until carrots are soft. Add in soup stock, and bring to a boil. Add in Tortellini, and cook on medium for 8 to 10 minutes. Here is a site that has our favorite bean soup recipe. It's quick, easy, healthy, and very delicious. We usually double the recipe, so it lasts a long time... http://randallbeans.com/pages/recipes/soup/easytofixmixedbeansoup.html We use the Randall Beans in our soup, but you could use dried beans, just soak overnight and rinse, and the soak again before you start your soup. Dried beans need to simmer a long time to soften, so allow time for that. I'm always looking for new ways to make sweet potatoes. Would you mind sharing your Sweet Potato & Rosemary recipe??? It sounds yummy!

I just had a sausage veggie soup and it was out of this world! You buy bulk sausage and cook it. Add any veggies you like~onions, zuccini, stewed tomatoes, green and red peppers. Dice the veggies small. Add 2 cans of beef broth. Cook and eat! It is sooo good!
