Here is my favourite chicken dish.
One chicken breast per person,
one bulb of garlic,
one piece of fresh ginger,
one piece of lemon grass,
method
cut a deep pocket in each chicken breast, fill with a mixture of grated garlic, ginger, finely chopped lemon grass. secure pocket closed with a cocktail stick, wrap in oven foil. Place package in oven roasting dish and roast at gas mark 9 for about 25 minits,
its simple and beautiful hot or cold
if hot it goes best with rice or noodles but if served cold goes well sliced with a crispy green salad and a large glass of white wine

This sounds fantastic. I will have to try it out. Any idea what gas mark 9 converts to in degrees? I am assuming around 375. I bet we could make these on the campfire too. Thanks for the great ideas.
