Can you believe that summer is nearly here? Along with summer comes the fast paced life. Everyone wants to be outside. Seems the entire family is coming and going at different times. I know I used to worry about my kids when they ran track. The days and evening could quickly turn into early mornings and find them still at the track field. They need homemade food and lots of fruit, to keep up their strength. Admit it, homemade is just better and you feel better about giving it to them. This cookie recipe is soft like a brownie but shaped like a cookie so it is easy to pack in the backpacks and lunch buckets. Just pack it in a Tupperware container or some other hard plastic container so it does not get crusted up. Everyone seems to enjoy these cookies. They are great to take to sick neighbors too. They don’t have to be stored in the fridge. They taste like a rich brownie. I always take mine out of the oven while they are still undone in the center. They seem to finish baking from the heat that they have already encountered. Enjoy and have a wonderful summer with your family! Fudge Brownie Cookies 2 1/4 cups All purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 cup unsweetened cocoa powder 1 cup sugar 1 cup packed brown sugar 1 cup butter 2 eggs 2 tsp vanilla 1 1/2 cups chocolate chips 1/4 - 1/2 cup chopped nuts ( I use walnuts) Preheat oven to 375 Mix flour, baking soda, salt and cocoa powder in a small bowl. In another bowl, beat the butter and sugars until light and fluffy. Blend in the eggs and vanilla. Add flour mixture, beating until blended. Add in chocolate chips and stir to mix. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes, checking often. It is very Important that you DO NOT OVERBAKE. Slightly Under baking leaves them moist and fudge like

LOL I cant stop - it seems to be in my blood to make everyone hungry and gain weight. LOL I also submitted this recipe and an article on gather . Shannon tried it the other night and came back and commented that is was the best cookie she had ever tasted. We love it and everyone who has tried it says they love it too. Shannon said she tooks some carmel sauce and heated it and put on some of her cookies and they were great like that too. Hope this helps. Enjoy your cookies and your family will love these.
