Dutch Oven Barbecued Chicken & Potatoes

I love to tent camp and one of the things that I enjoy most is the campfire cooking. Everytime we go camping, I return home with a new attitude. I have a new appreciation for the pioneers and the hardships they faced. One of the recipes that I use when we are camping is making Dutch Oven Barbecued Chicken & Potatoes. It is just wonderful when it is cooked outdoors in a dutch oven. This is my recipe. You can adjust it to use in your crockpot if you REALLY dont want to go outside and cook in the fire. I think you you will be amazed at how much better it tastes if you will cook it outdoors in a dutch oven though. LOL
Dutch Oven Barbecued Chicken & Potatoes
6 - 8 boneless, skinless chicken breasts
10 medium potatoes, sliced
3 - 4 onions, sliced
1 18 oz bottle barbecue sauce
Place half of the potatoes in the bottom of the dutch oven. Place a layer of onions on top of the potatoes. Repeat. Next place the chicken breasts on top of the potatoes and onions. Top with any remaining onions. Pour barbecue sauce over all ingredients. Put the lid on the dutch oven. Place 12 charcoal briquettes on top of the dutch oven, and 12 underneath. Cook for about 1 1/2 hours.

One of the things I want to do this summer is get a tent and go camping even if it means just camping out in my backyard. This recipe should come in handy. If you have any more campfire cooking recipes, please share them.

this souds good. i don't have a dutch oven. I wonder if I could do it in the crock pot?

All my dutch oven recipes are easily adapted to the crock pot. You will just need to adjust the time. I

I tried this, and it was great. Thanks a lot sugar. I used the crock pot.
