Chicken recipe information needed

First off, I wanted to know if anyone knows how churches cook their chicken, flavoring, seasonings, etc. Second, how do you brine poultry? To brine is mix a cup of sugar and a half a cup of salt together into 5 gallons of water for about 8 hours, correct? Thanks in advance everyone and I will let you know how it comes out.
