Share one of your favorite microwave recipes. Here's mine....

MICROWAVE INDIVIDUAL CHEESE CAKES

FILLING:
1 (8 oz.) pkg. cream cheese
1/4 c. sugar
1 egg
1/2 tsp. vanilla flavoring
Soften cream cheese on Medium for about 1 1/2 minutes. Mix in other ingredients and beat well until smooth. Place vanilla wafer or cookie in paper cup in microwave muffin pan. Spoon cheese filling on top and microwave on High 1 1/2 to 2 minutes until filling is set. This will make 6 cakes. When cool, spoon pie filling or piece of fruit such as kiwi, cherry, etc., on top.
I add crumbled Nilla wafers to the top to finish mine off or crumbled oreos.

My family loves pizza- We don't always have frozen pizza on hand- and usually don't have enough time to make the dough and let it rise then bake- so we make alot of individual pizzas in the microwave. Here is a recipe I use alot- Very simple even my daughter makes her own when she wants a snack!
6 count English Muffins
small jar of Pizza sauce
8 oz. package of shredded Mozzarella cheese
pepperoni (small bag)
Cut muffins apart- pour sauce on them- put pepperoni on them- add cheese- Cook in microwave for 2 minutes or until cheese is melted. Serves 3 or cut into 4's for small finger food party food.

Microwave Candy
Ingredients
24 caramels
2 tablespoons water
1 pound whole almonds; toasted
1 (6 oz) semisweet chocolate chips
6 ounces chocolate candy coating
Method
Place caramels and water in a medium microwave-safe bowl. Microwave on medium high power for 2 minutes or until mixture melts, stirring after each minute. Stir in almonds. Use a greased spatula to spread caramel coated almonds in a single layer on a greased jelly roll pan. Place chips and candy coating in medium microwave safe bowl, and microwave on medium-high for 3 minutes or until mixture melts, stirring after each minute. Pour chocolate mixture over almonds; spread to cover almonds. Chill until candy hardens. Break into pieces. Store in an airtight container in a cool place.

Here's a simple CHOCOLATE FUDGE recipe for you to try :)
1 pkg. (8 sqs.) Baker's semi-sweet
chocolate
2/3 c. sweetened condensed milk
1 tsp. vanilla
1/8 tsp. salt
1 c. walnuts, chopped
Microwave chocolate and milk in 1 1/2 quart microwave bowl on High 2 minutes, stirring after 1 minute. Stir until chocolate is completely melted and smooth. Stir in vanilla, salt and walnuts. Spread in greased 9 x 5 inch loaf pan. Refrigerate until firm, about 2 hours. Cut.

I couldn't find my actual recipe but this one is just the same so I'll post it!! It is really good and I've gotten some rave reviews for it!!!
Old Fashioned Indian Pudding
Ingredients
2 cups milk, divided
1/4 cup yellow cornmeal
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 egg, beaten
1/4 cup molasses
1 tablespoon melted butter or margarine
vanilla ice-cream
Method
Pour 1 1/2 cups milk into a 1 1/2 quart micro proof casserole. Cook on simmer or LO for 5 minutes.
Combine cornmeal, sugar, salt, cinnamon, and ginger. Stir into hot milk. Cook uncovered, on simmer or LO for 4 minutes. Stir well. Beat together egg, molasses, and butter. Stir a small amount of hot milk mixture into egg mixture. Return to casserole. Stir well. Cook, uncovered, on simmer or LO for 6 minutes. Pour remaining 1/2 cup cold milk carefully over top of pudding. DO NOT STIR.
Cook, uncovered, on simmer or LO for 3 minutes, or until set. Let stand 10 to 15 minutes before serving.
Serve warm, topped with vanilla ice cream.
Yield: 4 to 6 servings

I love burrito pie. It might sound a little odd, but it's so good.
Burrito Pie
8 Servings
1 lb ground beef
1/2 onion, chopped
2 ounces black olives, sliced
4 ounces green chiles, diced
16 ounces Taco Sauce
16 ounces refried beans
6 (8 inch) tortillas
5 ounces shredded cheese, cheddar or taco seasoned
Garlic, fresh or powdered, to taste
Directions:
1) Preheat oven to 350 degrees.
2) In a large skillet, saute ground beef for five minutes. Add the onion and garlic and saute for five more minutes.
3) Mix in remaining ingredients except for the tortillas and cheese. Let simmer for 15-20 minutes.
4) Spread a thin layer of mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas, then cheese, then another layer of the mixture. Repeat until all the mixture is layered in the casserole, topping it off with cheese and any extra taco sauce.
5) Bake 20 to 30 minutes in the preheated oven, until the cheese is bubbly and browned.

I don't have a recipe to share :( I did want to come and thank you for sharing this one though. I love cheesecake but hate how long it takes to make it. I will be trying this soon!
