and keep it refrigerated and dont leave it out....have you ever noticed when you buy a jar that after only two or three weeks, it sometimes smells different or funny? Now I would like to know why this happens nowadays? Have they shortened the time it keeps or what?

Yes!! My husband and I have noticed the same thing. It has gotten so bad that we have begun buying the very small jar rather than the large one! We have cut back on the amount of mayo that we use due to health concerns. I simply cannot stand the afterbite of the fat-free mayo, so I am just eating much less of the regular type! So the large jar starts smelling funky when it is still 3/4 full! I wonder what changed?

I believe it's actually the air that once it hits the vinegar the scent changes dramatically. Thats my feeling. I may research this in the future. Seems like a logical explanation. Pickles do the same scent change too & they are also stored with some vinegar solution.
HAPPY POSTINGS FROM GRANDPA BOB !!~
