How to make perfect Hash Browns?

When we visited America a few years ago I really enjoyed the hash browns we were served, they seemed to be made wholly on a hot griddle from grated potato, but I can't replicate that at home so far. What is the secret? In the UK hash browns are nasty deep fried potato cakes, I want to do the heaps of grated spud that you can serve chili on top of!

i've got this from arlene fontaine. USE ONE SQUARE OF HASH BROWNS - FROZEN KIND IS OK. PLACE ON FOIL COVER WITH CHEESE, CHOPPED GREEN PEPPER AND A PAT OF BUTTER FOLD FOIL OVER AND GRILL tried it, not perfect, but with a flair.

I don't like the frozen sort, I'd like to know how to make them starting with a potato!
