Irish Stew

Ingredients:
1 Kg mutton neck or shoulder chops
2 large onions
2 cloves garlic
200g carrots
100g parsnip or turnip
400g potatoes (3oog diced--100g grated)
dripping or lard for frying
salt pepper and thyme to taste
good meat stock pref.mutton
Method:
fry together onion garlic and meat until well browned (caramelised)
add salt pepper and thyme
cover meat with stock and simmer for about 2 hours
add potatoes (diced and grated),carrots and parsnips ,adjust liquid level and simmer for further thirty to forty mins or until veg is well cooked
Grated potato should thicken sauce.
Serve on whit rice.
