Carotene is the chemical contained in the yellow colour of certain vegetables i.e. carrots and pumpkin Carotenen is reputed to help preserve amd maintain "Night Vision" It actually helps you to see at night. Now what do you think of that?? Remember when Grannie told you to eat up your carrots so that you could see in the dark --She was right !!!!

I do like carrots especially carrot juice and pumpkin is one vegetable that is hard for me to find a way of cooking it except for pies and dessert. Do you have a good pumpkin cake recipe that contains no spices?

Try cooking fresh carrots like this. dice 500g carrots 5mm squares. put into a pot with 50g butter 50g sugar and the juice of half a lemon---no water! Bring to the boil turn down and simmer until cooked and juice is thick and caramel. Delicious11

I always was told that carrots do well to make our eyes prettier. And now they also helps to see better at night! that just great. Better start eating more carrots.

It is well known now that carrot is a wonderful vegetable and the good thing is that it is widely available and it is not expensive. I prefer to take fresh carrot juice which is also available quite easily. Besides, consuming it raw or taking out juice, carrot is used inmany other preparations. But the best would be to eat it in salad or take carrot juice. But please do not consume too much of juice at a time; it may create some other problems.
