Baking anything this weekend?

I'm going to make raspberry-cinnamon muffins tomorrow!

I'll be baking chocolate chip cookies, chocolate crinkles, muffins and donuts for my small shop tomorrow. :) I found out that using soft flour makes my muffins fluffier and more affordable. I use it even on cookies and some cake recipes.

I realize the weekend is over, but thought I'd share what I made. We were invited to a party at a house on the parade route yesterday. The hostess always has tons of food and drinks. I made homemade cheese danish~ which was a huge hit! I also made a big choc chip cookie and decorated it with Happy Birthday Katelyn as it was also my daughters birthday yesterday. Rasp cinn muffins sound awesome!

Hi Sunshine! Question: When you make the giant CC cookie how long do you bake it for? What temp? This is a great idea for a gift!

I'll tell you what. I didn't even make the homemade cc cookie dough, I bought one in the roll and spread it out due to lack of time. I cooked it at 350 degrees for 12 minutes to start. Then I kept checking it. I think it was 15 minutes total. I used one of those cooking stones and it came out perfect:)

I made whole wheat banana bread with chocolate chips and walnuts! It made the whole house smell yummy. Raspberry-cinnamon muffins sound good--I may have to experiment with adding raspberries to some of my recipes.

Nope no baking for me this weekend. It is way too hot to even think about turning the oven on. Luckily I still had some leftover cake my oldest daughter bought at a bake sale. It was a super moist white cake with buttercream frosting.

here are some recipes i am planning to bake from allrecipes.com Cooky Cookies SUBMITTED BY: Barbara Linton PHOTO BY: MARIAM "This is an ultra-short, yet wonderfully chewy and incredibly rich cookie! It is one of the most popular cookies I make, especially with adults (kids are usually not so fond of the nuts)." INGREDIENTS * 1 cup vegetable oil * 1 cup butter, softened * 1 cup white sugar * 1 cup packed brown sugar * 1 egg * 2 teaspoons vanilla extract * 3 1/2 cups all-purpose flour * 1 teaspoon baking soda * 1 teaspoon salt * 1 cup cornflakes cereal * 1 cup rolled oats * 1 cup chopped walnuts * 1 cup unsweetened flaked coconut DIRECTIONS 1. Preheat oven to 375 degrees F (190 degrees C). 2. Beat butter and sugars until fluffy. Slowly add oil and beat until oil is well incorporated. Add egg and vanilla, beat to mix. 3. In a small bowl, combine flour, soda and salt. Add to butter mixture and stir just until mixed. Combine corn flakes, oatmeal, nuts and coconut and add to cookie mixture; mix just until combined. 4. Use a cookie scoop to produce consistently sized cookies, but you can drop by rounded teaspoonfuls onto an ungreased cookie sheet, if you don't have a scoop. Bake at 375 degrees F (190 degrees C) for 12 minutes or until lightly browned. Since these are so rich, you can chill the individual balls of cookie dough and then freeze them in freezer bags. You can then take them directly from the freezer to the oven, just add a few minutes to the cooking time. ----------------------------------------------- Shortbread Cookies III SUBMITTED BY: Carol "Great for Christmas. Rich and buttery." INGREDIENTS * 1 1/2 cups butter, softened * 2 cups all-purpose flour * 1 cup confectioners' sugar * 1 cup cornstarch * 1/4 teaspoon salt DIRECTIONS 1. Work all the ingredients together with your hands until blended. Shape all of the dough into 1 inch balls 2. Bake cookies on ungreased cookie sheets, 2 inches apart at 300 degrees F (150 degrees C) for 20 minutes. 3. Let cool 10 minutes then carefully lift with spatula to cake racks to cool. Store in air tight container with wax paper between layers. Cookies keep well. 4. Variations: Flatten some balls with tines of fork and press 1/4 of a red or green glace cherry in center of each. Make thumbprint indentation in some balls and fill with a tiny bit of jam, jelly or marmalade. Dip some balls in slightly beaten egg white and roll in finely chopped walnuts. I think I'll be baking brownies. Do you like brownies? Here's a yummy Speedy Brownie Bars Recipe . These are by far the richest, gooeyest brownies I've ever tasted-- 2 cups sugar or 1 cup Splenda Sugar Blend for Baking 1 3/4 cups flour 1/2 cup unsweetened cocoa powder 1 teaspoon salt 5 eggs 1 cup vegetable oil or olive oil 1 teaspoon vanilla 1 (12 ounce) bag semi-sweet chocolate chips or dark chocolate chips 1 (6 ounce) bag semisweet chocolate chunks Preheat the oven to 350 deg. Combine first seven ingredients in a bowl; beat until smooth. Stir in ½ bag chocolate chips and ½ bag chocolate chunks. Pour into a greased 9x13x2 inches pan OR 8x8 inches dish. Sprinkle top of brownies with remaining chocolate chips and chunks. Bake for about 30 minutes or until desired level of doneness. Cool on wire rack.
