What can I do with kumquats?

Hi all, I have a kumquat tree in my garden and haven't got a clue what to do with the fruit, which are now looking ripe. Not even sure if this is the right time of year to pick the fruit. Does anyone know what I can do or can tell me more about this lovely little tree. Should I wait for it to get bigger before using the fruit, it's about 2 foot high at the moment, also do you know how big this will grow. Look forward to hearing from you J.
