What are some of your favorite, inexpensive meals?

I'm trying to cut back a bit on our food budget by sneaking in a couple of inexpensive meals at least 2 times a week. Grilled cheese sandwiches and tomato soup is one that we would eat in the winter, but with summer here, I'm looking for a few more ideas.

One thing that I love to make is with the crock pot or slow cooker. Get a few boxes of scalloped potatoes, some ham or chicken and a little bit of cheddar cheese. Mix the scalloped potatoes according to the directions on the box and dice up the ham or chicken into cubes. If you are using chicken, make sure it is cooked before you add it. Stir everything up and add some of the extra cheddar cheese to it. When it's done in a few hours it might look messy but it tastes great. Serve it with a salad or some garlic bread and you are set!

Stir fry. I get a mixed bag of frozen stir fry veggies for about $1.25 and cut up either some chicken or pork to cook and throw in. About 3/4 of a pound is enough meat for me and my husband (and he's a big guy). When I make burritos, I make a package of spanish rice or add in black beans so I can use less meat and keep the price down.
