Cats need meat. They actually need more meat than dogs do. My vet said that it was better to give my cat at least one can food a day because can food has more meat in it and the dry food has too many carbs for cats especially older cats that are susceptible to diabetes. Nature built them to be carnivores please don't try to change them it is bad for their health.

I have heard of cats being brought up on a non meat diet but maybe started when they are very young, but I personally think it is cruel, cats are meat eating animals and will probably go out and catch mice and such anyway so they will always have the natural want for meat...

That's what I think happens when people say that they have an indoor/outdoor vegetarian cat.
There are plenty of naturally vegan pets if people have an objection to feeding anything meat. I have house rabbits and guinea pigs, they are just naturally vegan pets. If I were to get a cat, I'd feed it an appropriate diet for it's digestive system.

From what I understand cats need a diet that is a lot of protein. They are hunters like wild cats are. I don't think your cat would be very happy - or healthy - on a vegetarian diet.

I wouldn't recommend it. For dogs, it's a possibility because they are omnivores. But cats eat very little vegetable matter naturally. It can be done, but in general, I'd say if you're looking for a vegan pet, don't get a cat. There are vegan cat foods commercially available, so if you were to do it, those would probably be more balanced than trying to do it yourself. But even then, there is great concern that the taurine in those products is not as easily digested by cats. Which makes sense that they couldn't digest plant products, because they're digestive tract is totally set up for meat based foods.
