Looking for a good chicken salad recipe....

I love this curry chicken salad with grapes. It's always a hit.. 3 c. cubed, cooked chicken 1 (8 oz.) can sliced water chestnuts, drained 1 3/4 c. seedless red grapes, halved 1 (11 oz.) can mandarin orange sections, drained 1 c. finely chopped celery 3/4 c. mayonnaise or salad dressing 1 tsp. curry powder 2 tsp. soy sauce 2 tsp. lemon juice Boston lettuce or leaf lettuce (optional) In a large bowl combine chicken, water chestnuts, grapes, mandarin sections and celery. For dressing, in a small bowl stir together mayonnaise or salad dressing, curry powder, soy sauce, lemon juice and salt to taste. Mix well. Stir dressing into chicken mixture; toss to coat. Cover and chill up to 8 hours. To serve, place a lettuce leaf on each plate. Top with chicken salad. Makes 6 to 8 main dish servings. If salad needs to be stored longer than 8 hours, stir in mandarin orange sections just before serving.

APPLE PASTA SALAD Ingredients: 1 container (8 oz.) plain nonfat yogurt 1 can (8 oz.) unsweetened crushed pineapple, undrained 1/2 tsp salt, optional 1/4 tsp garlic powder 1/4 tsp dry mustard 1 tsp finely chopped crystallized ginger 1 Tbsp honey 2 cups uncooked rotini pasta 1/2 cup shedded carrot 1 cup sliced celery 1/4 cup sliced green onions 1/4 cup raisins 3 cups diced, unpeeled apples (suggested: Empire, Gala, Ida Red, Jonagold, Jonathan, McIntosh, Red Delicious, or Rome) OPTIONAL: Add 2 cups cooked, chunked, chicken with the apples when called for in recipe. Instructions: Thoroughly combine yogurt, pineapple, salt, spices, ginger, and honey; refrigerate. Cook pasta according to package directions, omitting salt. Rinse with cold water and drain thoroughly. Cool completely. In large bowl, combine all ingredients including yogurt dressing. Chill thoroughly before serving. Makes 8 (1 cup) servings.

Here's a recipe for Chicken Salad with Fruit 1 can (about 12 ounces) pineapple tidbits 1 1/2 to 2 cups diced cooked chicken 1/2 cup thinly sliced celery 1/4 cup raisins 1/2 cup toasted slivered almonds 2 green onions, sliced 1/3 cup mayonnaise 1/3 cup sour cream 1 teaspoon ground coriander 1/4 teaspoon dry mustard dash ground allspice 1 small clove garlic, minced dash cayenne pepper, optional mixed salad greens or romaine lettuce Combine chicken, pineapple, celery, raisins, almonds, and onions in a bowl. In another bowl, combine remaining ingredients. Toss dressing with chicken pineapple mixture. Arrange on plates lined with mixed salad greens or romaine lettuce. Makes 4 luncheon portions.

Julialaurene, I don't have any chicken salad recipes for you, as I'm always on the lookout for a decent recipe. Looks like you found some in your post! Thanks for asking the question for me. :)

Hi there. I know a good chicken and Avocado Salad, which is nice during summertime... And it goes like this: 500 grams of shredded chicken (cooked) 1 head of fancy lettuce or any lettuce 1/2 thinnly sliced Red Onion 1 thinnly sliced de-pipped red pepper or red capsicum 3 Avocado, de-pipped and sliced thickly 1 cup of sprouts... 1 cup of cashew nuts 1/4 cup of seasame seeds 1/4 cup of pumpkin seeds 1/4 cup of sunflower seeds 1/2-1 cap of Olive oil In a salad bowl, Add all veges, sliced as stated, Add shredded chicken and mix up well with veges. In a sauce pan, add olive oil and lightly brown and fry all the seeds and cashew nuts, when these seeds are lightly brown and not burnt, pour it all over your salad mix... There cool off or eat straight away... This is such a nice salad...Good luck
