What's your favoirite dinner on a hot summer night?

There are times when it is so hot and humid I don't want to eat anything hot. What do you like to have for a summer dinner? I like a big cheif salad with leftover grilled chicken breasts so everything is cool. I even use fat-free dressing. I guesss this would just about be a healthy dinner. I have a bottle of water with it. Give me some more easy, cool, summer dinners!! Thanks!

We are definitely two peas in a pod, because when I read the title of your discussion, chef's salad was exactly my thought too! Along with the chicken, I add strips of honey baked ham, pastrami, and turkey. Yum yum yum! Darn it! Now I'm hungry again! LOL

Anything cool. My favorite preference on a really hot summer day/night is a sandwhich with chips and a nice, ice cold drink. I like having subs from Sheetz/Subway or a local gas station that makes excellent subs. Those are great to eat, and they fill you up. There are some days I just don't feel like eating anything hot because it's way too hot outside.
