Zuchinni, what to do?

My MIL blessed us with some summer squash, cucumbers and zuchinni, lots and lots of zuchinni. My kids like zuchinni bread and I like to stir fry it with onions, but what else can I do with all this zuchinni? I've even given some away. Any good recipes, especially kid friedly ones, would be most appreciated.

Stuffed zucchini is a favorite around here, but it's best for those "overgrown" ones. Slice zucchini down the middle and scoop out the seeds. Brown a half pound of ground beef and add a half cup of cooked rice, a can of tomatoes or tomato sauce, a teaspoon of garlic powder, a quarter cup of chopped green peppers and salt and pepper. Stuff the zucchini with this mixture and bake at about 350 for a half hour or until the zucchini is tender. You can use cheese sauce instead of tomatoes.

This sounds good. With the meat and rice it could be a main dish. Oh, and these zucchini are definately the "overgrown" kind. They are huge. I've never seen them grow so large.

i havnt tried this recipe yet but i've seen it on a sunday cooking show, its some sort of vegetrian recipe they used it to make lasagna :D they substituted the lasagna noodles with the zuchini :)

The fritters are my all time favorite but you can also make fried zucchini with it. Cut or slice the zucchini and them prepare three bowls. Bowl 1: flour and Season All (if you like that) Bowl 2: two or three beaten eggs and a little milk Bowl 3: breadcrumbs and parmasean or romano cheese Put the zucchini slice in the flour then into the egg and milk. Make sure it is coated well and then put it into the breadcrumb mix. Fry in a pan with oil until it is golden brown.

This sounds fabulous. I will have to try this receipe. I always buy zucchini to make zucchini bread but then I never get around to it and they spoil.

This recipe reminds me of how my mother would prepare yellow summer squash. It was so good. My kids may eat it if it is fried like this. Thank you!

Hi there. These are good chopped into noodle or asian dishes and if your children like casseroles or stews, they're also nice in there too, along with carrots...

I have one child that likes casseroles, stews and soups, but one that will spend 10 minutes picking everything out. Thanks for your advise.

Fried zuchinni is good. You just slice it into circles. I think you dip it in egg, then flour and fry it. It's been a long time since I've made it but I'm pretty sure that's how it was. It was pretty good.

Cut it in half lengthwise, brush with olive oil and grill it. It's SO tasty. You can also wrap it in foil with spices and other veggies and grill that. There's always breaded and fried zucchini sticks -- on of my personal favorites. And zucchini is really good added to pasta dishes.

You could try making Zucchini Fritters : 1 1/2 cup of flour 2 teaspoons of baking powder 3/4 teaspoon of salt 1 cup of milk 1 egg, beaten 1 cup of shredded zucchini Grease for deep frying In bowl, mix flour, baking powder and salt. Mix milk, egg and zucchini. Add to dry ingredients. Mix just until moistened. Drop by tablespoons, a few at a time, into deep heated grease. Fry 3 to 4 minutes until golden brown. Serve hot. Dip in ranch dressing or a cheese sauce. Enjoy!

I absolutely love zucchini, I absolutely love it spaggetti bolnaise...I think that it brings it true flavour out....My mouth is watering, just typing this...lol.
