figs have been in abundance....what do you do with figs?

I have been given alot of figs....? what all do you do with figs?

Hi eaforeman, we have a short fig season here but they are a wonderful fruit as can be eaten just as they are, fresh from the trees, or used to make either savoury or sweet dishes. Figs go very well with palma ham for instance, and are a natural with honey, so baking them with honey and adding some natural Greek yogurt on the side is very very popular here.

INGREDIENTS * 1/4 cup butter, softened * 1 cup white sugar * 1 egg * 2 cups all-purpose flour * 1/2 teaspoon salt * 2 teaspoons baking powder * 1 cup evaporated milk * 1 teaspoon vanilla extract * 1/4 teaspoon almond extract * 1 cup chopped fresh figs * 1/4 cup packed brown sugar * 1/4 cup water * 2 cups chopped fresh figs * 1 tablespoon lemon juice DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Spray two 8-inch round cake pans with vegetable oil spray. 2. In a medium bowl, sift together flour, salt and baking powder. Set aside. 3. In a large mixing bowl, cream butter with the sugar until fluffy. Add egg and beat well. Add flour mixture alternately with the evaporated milk. Fold in vanilla and almond extracts and chopped figs. 4. Divide into two prepared 8 inch round cake pans. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center comes out dry. 5. To make the filling: In a saucepan, combine 2 cups figs, brown sugar, water and lemon juice. Bring to a boil. Reduce heat to a simmer and cook until thickened, about 20 minutes. In a large mixing bowl place figs and sprinkle with baking soda. Pour the boiling water over the figs and soak for 1 hour. 2. Drain figs and rinse thoroughly with cold water. In a large Dutch oven combine the sugar and the 4 cups of water; bring to a boil and cook for 10 minutes. 3. Add the figs and lemon slices to the syrup in the Dutch oven and cook for 1 hour, stirring occasionally. 4. Spoon figs into hot, sterilized jars and spoon syrup over figs, leaving 1/2 inch of head space. Top jars with lids and screw bands on tightly. Preheat oven to 350 degrees F (180 degrees C). 2. Cream sugar and shortening and add beaten egg. 3. Sift dry ingredients and blend with creamed mixture. Fold in figs and nuts. 4. Drop by spoonfuls on greased sheet. Bake for 15 to 20 minutes.

wow. appreciate all the great information. This could keep someone busy if they have alot of figs.Figs have gone up in price too.
